My bacon-loving DH would insist that you can never go wrong with bacon. I'm still kind of gobsmacked that he hasn't bought bacon salt or other bacon flavored condiments For two or three years now, DD and I always consider getting him bacon flavored lip balm or something like that for his stocking, but so far, it hasn't happened. I almost caved on bacon band-aids last year, but decided not to pay the crazy price they wanted for something he would probably never use. When I told him about them, his reply was about what I expected "Yeah, just buy me a pack of real bacon." The kids did buy him a big pack of Wright's applewood bacon from Sam's for part of his father's day present this year, though. Artist DD also made him a little painting with a cute bacon guy and proclaimed this 'the summer of bacon.' He's ruined those kids, I tell ya! LOL! My grandson has a thing for dill pickles - I did cave last Christmas and bought him dill pickle lip balm and chewing gum! Ewwwww! lol Ha! My DD loves dill pickles (imo, at an unhealthy level) The crazy kid would try to drink dill pickle juice when she was a kid. When DH first met her, he won her over by letting her get all the dill pickle slices she wanted from the BBQ place condiment bar. Dill pickle dip or cowboy sushi is always on her birthday dinner request list. Last year in her stocking, I put a box of dill-pickle flavored cashew snack packs. They were the most strange and random dill-pickle thing I could find. I will have to look for dill pickle lip balm and/or chewing gum (ew!) this year.

One thing I forgot to mention that's kind of a twofer with the spices is Tabasco spicy salt. A long time ago, I got a container free when I bought some variety of Tabasco sauce, and I ended up loving that stuff. You might give that a try sometime if you ever run across it. A shake or two can pep up almost anything. That reminds me that I haven't been able to find it in my Publix and I need to put in a request for them to order it so I don't have to mess around with going to a different store just for that salt. You can also buy smoked salt in the grocery store now - it comes in its own little grinder. I LOVE it. It sits on our table next to the regular salt grinder. It adds a lovely subtle smokey flavor.

I was a cooking fool yesterday! I made chicken tacos again for the freezer. And I had this beef roast I needed to cook. I had a hard time finding a recipe for roast beef in the pressure cooker so I cobbled some things together.
1 roast 1 can French onion soup 2 envelopes onion soup mix (1 would probably be sufficient)
75 minutes high pressure, 20 minutes NPR.
It was so good! And it made such a good gravy. I just added some cornstarch. I used my second inner pot to make mashed potatoes. Yum yum yum!

Missed posting yesterday as I was out all day.
The short rib roast I made was divine! As I had said I used the short rib recipe and just adapted it to a roast. Omg..it was SO GOOD, DH hates well done meat, but I cooked it for 65 min. NPR for 10 and it was perfectly medium.
So glad I found this pot! Thank you Elaine!!!

I have had my Panasonic electric pressure cooker for a few years. Yesterday it was my Birthday and I got an instant pot and was eager to compare it to my Panasonic. I made some hard boiled eggs in it and was shocked that the time it took the instant pot to come to pressure was 1/10th of the time the Panasonic takes to come to pressure. The quick release was much quicker. 4 minutes on low pressure in the instant pot made a egg half way between a soft boiled and a hard boiled. 4 minutes in my panasonic and the egg would have been hard boiled. The peels came off easily on both.
I am excited to have 2 electric pressure cookers. And I am sure they will both get used. Super excited to make yogurt and experiment with all the buttons that are new to me.

I've got tomato soup going in my IP right now. I'm using this recipe, but have spiced it up a bit with garlic powder, onion powder and Italian seasoning. I'll let you all know how it turns out. Tonight's dinner is going to be spaghetti with bolognese sauce that I'll make in the IP.

The recipe for the tomato soup as written was a fail for me - it didn't taste much like tomatoes at all. So, since I'm craving tomato soup, I went ahead and made my version. Here's the recipe:

Today is DH's bday, and he wanted his mom's lemon cake, so I had to turn the oven on-ugh. It's still almost 90* every day. But now-CAKE!! He also wanted boneless ribs with sauerkraut. Pressure cooked the ribs, then added the sauerkraut and kept it all on slow cook (low) until he got home from work. Tomorrow, I'm planning on pinto beans and cornbread. yum! Who has bought that set of round pets that comes with the rack? Any reviews on how you like them/quality, etc.? link And dang! Now it shows unavailable, and no known restock date.

How long would I cook swiss steaks (I think these are tenderized round steak) in the IP? Close to 1" thick I think. I'm reading anywhere from 10 to 25 minutes and that's a lot of variation. I set it on 15 min but we are leaving right after supper and I don't have time to let it natural release only to discover I need to cook it longer. Any ideas?

True story my mother is really into her pets. Our dog growing up, her birthday was the day before or after my dad's. One was December 12 and one was December 13. Do you know I never did know which day was actually my dad's birthday.

My favorite decal so far was an image of Jon Snow and it said "Dinner is Coming". That is awesome!! A decal I saw recently that made me smile was an image of Ryan Gosling that says, "Hey girl, relax. I'll make dinner". I LOVED the Ryan Gosling meme's that were all the rage a few years ago. So funny!

I kind of threw it together. 1 1/2 cups of macaroni, shredded sharp cheese, parmeasean cheese, seasoning, 1/2 cup of cream, some water. Threw it in the air fryer for 10 minutes. I had some pre packaged smoked salmon from Seattle. <span> Took the mac and cheese out and added the shredded salmon topped with smoked piperika back in the air fryer and set for 10 minutes. I kept checking so I'm sure I didn't use the whole ten minutes. Turned out really good
