I want to start the thread by thanking all of the well wishers from yesterday. If I didn't respond to you please don't think me a slob. I was very tired when I got home and read the thread, but didn't respond. This is never meant to be a pity party or sympathy grab. Anything but, please. My docs ran tests yesterday and think they can keep me at home unless something silly shows up in my labs. You are a wonderful bunch of dinner eaters and I appreciate your concern and your good thoughts. Last night we had a fend night, w/leftover pizza, ramen and cereal. Tonight I'm not sure what the plan is going to be, but I assume another low key night, since I'm benched. Sorry that I haven't been much help w/dinner ideas lately. When I'm up and around I'll be expected to make some good meals, once again. I'm waiting to try leannec's creamy chicken penne. What's on your menu? Have a wonderful day.

Well, our tri tip last night was delicious. Both my DS and DH said that they want tri tip sandwiches tonight...yes! I'll probably do a fruit salad and either fries or onion rings with it.

Beef Stew turned out great last night (despite some last minute adjustments to the recipe due to not having the exact right ingredients) 😉
Tonight is Pumpkin Protein Pancakes - another new recipe! I might add some chocolate chips (does that counteract the protein in the pancakes?) 😉

I hope you don't have to go to the "spa" Let me know if you want me to start the threads here so that you can rest We finally ate up all of the Thanksgiving leftovers last night so I have to cook tonight I'm trying out a new recipe that looks really good to me ... who knows if my family will like it Creamy Tuscan Garlic Chicken I'm a garlic lover so I plan to use real garlic rather than the dry stuff and I'm going to add some sliced fresh mushrooms as well

Last night we had a fend night, w/leftover pizza, ramen and cereal. So, you had "College Night"? Glad you are able to stay out of the hospital and hoping it stays that way!
DH has early softball, so I believe I wrote "whatever" on the menu board.
Last night, we had to run to MIL's house, and ended up being there later than anticipated, so we stopped at Little Caesar's on the way home. We have all kinds of names by which we refer to Little Caesar's, none of them complimentary, but their Deep Dish pizza is actually not too bad, and we had crazy bread, which we do like. I will probably have leftovers of that when I am ready for dinner, and DH will pick up something on the way to softball, and then eat the remaining pizza when he gets home from softball.

Hoping you won't have to go to the spa, scrapmavenI have painted again today. Did I mention I intensely dislike that activity? Halfway through, I think, and I might have some chocolate to celebrate that. Dinner today was homemade pizza, which both kids love (especially since I added sliced sausages). No dessert today....except for me (the aforementioned chocolate). What they don't know, won't hurt them. (DD is at drama school, and DS is at the gym. The national championships are only a few weeks away).

DH is playing in a golf tournament so I will join the group for dinner. But, since I'm leaving early tomorrow for my 4-day crop, I'll make chicken Rice-a-Roni and strawberry jello salad for them to eat tomorrow night.

We're starting a big painting project today and I know I'm going to be exhausted by tonight so I'm going to throw a small pork loin in the the slow cooker this morning and will probably make pulled pork sandwiches this evening. Maybe cole slaw to go along with them.

We cleaned all the furniture out of the kitchen and we ended up with pizza last night, with a salad and garlic bread. All delivered. I opened the door. Tonight I am going to the freezer to get out the beef stew!! (I forgot to get it out this morning...) I will grab some bread from Cousin's to have with it. cadoodlebug, you just gave me an idea for tomorrow's dinner - chicken rice-a-roni. That sounds good!

I doubled the recipe so I could freeze half and freezing all of it will not help me use the massive quantity of broccoli in my refrigerator. miominmio , you and anxiousmom need to get together and compare notes about painting. ETA: leannec, I have bookmarked that recipes several times as one I want to try. Let us know if it's as good as it looks/sounds.

I'm having the leftovers of the palak paneer I made last night. When I'm home alone, I tend to stretch dinners over two nights - it's easier than cooking everyday, and also adjusting recipes so they only make one serve. scrapmaven - I hope you manage to stay well enough to avoid hospital. leannec - that recipe looks delicious. Please report back tomorrow on how it is. I have the recipe saved, but like to have a 'real' recommendation before trying our something new on DH.

We're having meatloaf (out of the freezer!) with baked potatoes, cauliflower and corn.
I'm glad I remembered the meatloaf was in the freezer...Dh probably wouldn't ever remember that it was in there.

I think many of us have some physical issues and we have you as inspiration to forge ahead, not as anything else. Well, your dinner ideas are always awesome. But it's your attitude and the way you word things that are inspiration to us. That said, we have a busy day of errands around here and I am going to throw something together - Trixie Bender gave me an idea with egg salad so that is where I will start. I'd like to have time to make some cookies with coconut in them, but we'll see. Thanks for the thread.

Add chicken, artichokes, onions and enough mayo to moisten and mix well. Heat through and enjoy!

This recipe is fairly similar to the one leannec is making tonight. It includes pasta which lets you avoid thinking about what to make with it! I haven't made it in a while, I think it's time, maybe this weekend. TUSCAN CHICKEN PASTA (MODIFIED) DON’T FORGET TO RESERVE THE PASTA WATER TOTAL TIME: 0:30-0:40 LEVEL: EASY SERVES: 4 –( I GUESS IF THEY ARE HUGE EATERS! IT FEEDS US FOR 2 DAYS) Ingredients • 12 oz angel hair pasta • 6-8 slices bacon, cut in half • 1-1-1/4 lb. boneless skinless chicken breasts, cut into bite-sized pieces • salt • black pepper • Garlic Powder • Onion Powder • 3 cloves garlic • 2 c. diced tomatoes (canned or fresh) • 3 c. baby spinach – I generally use almost the whole pkg of Aunt Mid’s • 1/2 c. heavy cream (can use half and half, which I normally have) • 1/3 c. grated Parmesan (good parmesan) • Red Pepper Flakes and additional parmesan for the table Directions 1. Cook the bacon in a large skillet until fairly crispy. Remove to a paper towel lined plate. Drain some of the bacon grease into a small bowl. 2. In the meantime, get the water boiling for the pasta and cook it while you cook the chicken. Reserve one cup of the cooking water before you drain the pasta. 3. Cook the chicken in the bacon grease remaining in the pan (add more from the bowl if you didn’t leave enough) – sprinkle with salt, pepper, garlic powder and onion powder. When done, remove to a plate. Crumble or tear up the bacon into bite sized pieces and put it with the chicken. 4. In the skillet, add the tomatoes, spinach, garlic and season with salt and pepper (and more onion powder and garlic powder if you’d like – which I do). Add heavy cream, Parmesan, and ½ cup pasta water. (the remaining pasta water is so in case it is too dry, you can add more). Let simmer, then add pasta and toss until fully coated. 5. Add chicken and bacon and toss to combine. Serve with red pepper flakes and additional parmesan on the side.

I think tonight I may try the peach chicken with basil. It's supposed to be very cold tonight and may freeze, so I need to pick the rest of the basil anyway. If the peaches aren't ripe, I guess it's just basil and chicken.

Chicken and Broccoli Alfredo with Breadsticks. I also have a ton of broccoli as it is the only vegetable my oldest son really enjoys. So I've been fitting it in in every other dish hoping the guys won't notice. So far my sneakiness is paying off!

I've decided to stop painting for the day. I started with a trip to the paint store for more. damn. paint. Then Publix for a dessert for tonight (book club and I am just too tired to be creative and make an appetizer so I bought a pre-made cake.) Then home, painting and when I stopped for lunch I made the fatal error of sitting on the world's most comfy couch and promptly fell asleep. I slept for almost TWO hours, the kind of deep sleep where you dream-funny dreams about contractors and painting and tearing down a part of my house... As for dinner tonight, it will be what food is either scrounged up when I get home, or whatever is available at book club. I am NOT cooking. miominmio I am glad to know that I have company in painting hell. At this point, there is no amount of chocolate that can make it better.

We took our Golden to the vet this a.m. - he has dry skin and his back legs are giving way. She did x-rays and saw some hip dysplasia. We got him home and he had difficulties getting out of the SUV. His front legs were working but the back one were dragging. We finally got him in the house with a lot of love and sweat. He is sleeping on a rug now but hasn't moved in an hour. Hoping the prednisone kicks in.
We had frozen margherita pizza.
We're worried about our 'baby'. Keep him in your P & PT - Thanks a bunch!!!!!

Don't have time to read the thread right now but I wanted to post because I've been missing some days lately. I bought a refrigerated "ravioli lasagna" (not sure exactly how that works) at Costco (and also a chicken, of course) and I'll make it tonight if DS is available to take the 7yo to tae kwon do, so I can be home while it bakes for an hour-plus. Plus salad and sourdough bread. Will check back in later on and catch up on everyone else's dinner, troubles, etc.!
