For those who have made it--have you used regular size loaf pans rather than 7 x 3 which is a weird size that I've never seen? If so, what size did you use and how did you adjust the bake time? Also, 3 cups of sugar seems like a LOT--anyone ever adjust the amount?

I've used pans from muffins, mini loaves, I have a number of those small loaf pans 7x3, and full loaf pans. If you used full loaf pans, if would fill at least two of them. I would lengthen the bake for larger pans. I can't tell you a precise time, because I cook until done with the toothpick test. It involves starting to visually check at the recipe time and continuing until they look done and switching to the toothpick test. It isn't too much sugar - don't forget that pumpkin is a squash and needs a lot of sugar to make it sweet. Think of how much sugar you put in pumpkin pie and you don't have all that flour to sweeten too.

Have you ever tried spice cake mix + can of pumpkin? It is so easy, tastes so good, and couldn't possibly have 3 cups of sugar since the cake mix is less than a pound To make it a little healthier, I like to mix in a quarter to a half cup of ground flax. I sometimes add in chopped apples or chocolate chips. They're also great plain, sprinkled with sanding sugar on top for a bit of crunch.

I was just looking at this recipe too. Several reviews said that they used 2 cups of brown sugar and it was definitely sweet enough. And it seems like many people did 2 standard loaf pans for 65-70 minutes.

I usually put the batter in three regular size loaf pans or two larger size. It's SUCH a good recipe. So good.

I usually make cupcakes and it takes quite a bit longer than it says on the box, because it is so much denser. I use a toothpick to test when they are done. They are best eaten on the same day as they are baked.

Edited to add: I generally do a mix of pan sizes (regular loaf, mini loaf, etc.) and if I have small amounts of batter left I sometimes put it in cupcake tins.

I make that recipe in 6 mini loaf pans. I also make a powdered sugar glaze for it that I pour on while it's warm. Mmmmm...
I usually set the oven temp 25* below what the recipe says and set the timer for 30 minutes. Then I gradually add on minutes until it's done. I'd rather babysit it a bit to make sure it doesn't overcook.

I'll second Elaine and say two large regular loaf pans would be perfect. I happened to go to a store yesterday that sells aluminum pans for a great price and bought 4 of the 7 x 3 inch pans for 39 cents each. I reuse them so they're a good deal. I used the three cups of sugar and everything's it's really awesome!

I use two wider loaf pans and it has to cook closer to an hour rather than 50 minutes. And I also cut the sugar. I only use two cups - one brown sugar, one white. It's my family's favorite pumpkin bread. Confession: I had some for breakfast just this morning.
