Happy Tuesday. In yesterday's thread, iamkristinl16 asked about my lunches. This might be a good day to share our healthy food choices. I'm always looking for more ideas! I pack all my lunches on a Sunday; they stay fresh all week. I might get a bit bored by Friday, but for the most part I enjoy my lunch. I make a roll up from a whole wheat tortilla. I use a little reduced fat cream cheese and then fill it with Boars Head turkey, spinach, shredded carrots, diced cucumbers. As my sides I have a fruit salad (right now it's grapes and melon). Some weeks I make a pasta salad from whole wheat pasta and use a yogurt based dressing on that. My "dessert" is usally a couple graham cracker squares. Personally, I find it better to just stay away from sweets all together. My snacks during the day are usually sweet bell pepper strips, applesauce, or string cheese. Currently I'm loving a taco salad in the evenings with pinto beans, a handful of tortilla chips, greens and tomatoes. My dressing is salsa. I'm not a big meat eater, so most of my protein is beans and dairy.
