gillyp , are you OK? Hoping you got normal results. Rest well. I think I'm ok, thanks! It was just to confirm that all is well and rule out any problems. I had a couple of episodes a few weeks back where I and the doctors thought I was having a heart attack but it's all calmed down and I've been fine since. The consultant just wanted conformation that all is well so fingers crossed it will be.

Reading today's thread I realized I have never made Sloppy Joes for my guys! 😳 I need to rectify this and locate a recipe ASAP! A lot of sloppy joes being fixed today! Conchita, we enjoy the Pioneer Woman sloppy joe recipe! I can NOT stand mandwich. So very gross. Thank you! I'll look it up and give it a go.

sueg I'm glad your sil has a diagnosis. Poor woman has been really hit, hasn't she. I hope she improves quickly. I had to go for a cardiac CT angiogram today, which is a 4 1/2 hour round trip to the hospital so I'm not really fancying cooking. It will be either Indian take away or bacon sandwiches. Best go and see what DH fancies. 4.5 hours? That is insane!! I hope your appointment went well after all that travel time

I love bacon and I would totally do the same thing just in case the results came back indicating that I could never have bacon again! Kind of like every time I go to the dentist, I feel the urge to drink a Slurpee and eat a pack of Skittles.

I am alone today for supper so I will likely have a frozen pizza doctored up with homemade pesto and some cut up vegetables.
I, too, have never made sloppy Joe's. I do make Italian meat sauce, but I put it on polenta like my mom did.

I am thinking of pizza for tonight. I had a bad night last night, ended up sleeping in and nearly being late for Kinder this morning, and have just woken after falling asleep for an hour this afternoon. I just can't be bothered with cooking. A small update on my SiL: She is still very sick, but we have a diagnosis. She has both meningitis and encephalitis, and is being treated in Intensive care where she is considered critical but stable. Docs say next 48 hours are critical, but at least she has been conscious and able to recognise my brother and her 2 daughters. scrapmaven - I hope all your doctor appointments go well. I just wanted to send on my good thoughts to your SIL. One of those diagnoses is bad enough but to have both...I am so sorry. My almost 10 year old nephew was diagnosed with Autoimmune Encephalitis in June and it has been/is a very stressful and sad time for our family. I wish your SIL and your entire family strength and comfort as she battles these diseases. I read this thread everyday but most days never really have complete meals to add. I work 2nd shift so it is often a mishmash of strange stuff. But since I posted on this thread tonight I feel obligated to tell you what was for supper. And that would be left over Chicken Fettuccine Alfredo, some mushrooms, Cabot cheese and triscuits, and an apple.

Now I have a major Craving !!!Hmm.....gotta add some things to my grocery list I've never made parmesan fries---that sounds YUMMY! But oops, I better parmesan zucchini strips instead---I know I'd eat way too many "tators", and I've recently lost weight, so I need to watch it. BUT, I will NOT give up a yummy bun for a sloppy joe!

Well, I didn't go out of town and I DIDN'T make sloppy joes. Due to several happenings yesterday afternoon, I got home and went on strike. I made some onion rings and had a cucumber sandwich. Don't make momma mad!! Anyway I have been wanting to try the parmesan zucchini strips for awhile. They would be so much better for me than those dang white potatoes. Have you made the zucchini before? Crispy? Good?
