I'm a bit sleepy after last night. Anyone else? Still, dinner must go on and eventhough my pesky family had dinner last night I know they'll want dinner tonight, as well. Maybe I shouldn't post when sleep deprived? CONK! Tonight I'm going to make a new recipe that my neighbor posted, Chicken Burrito Bowls: INGREDIENTS 2-3 boneless skinless chicken breasts 3 bell peppers, any color, sliced 1 large red onion, sliced 2 tablespoons olive oil 1 tablespoon taco seasoning Salt and pepper 1 jar salsa 3 cups cooked brown rice, divided 1 can black beans, drained and rinsed 1 can corn 1 cup shredded cheddar cheese 1 lime, sliced into wedges Fresh cilantro to garnish PREPARATION 1. Preheat oven to 400˚F/200˚C. 2. Line a baking sheet with foil. 3. Place the chicken, peppers, and onions onto the baking sheet and drizzle with oil. 4. Sprinkle the taco seasoning evenly over both sides of the chicken breasts. 5. Salt and pepper the peppers and onions, tossing to coat. 6. Top each chicken breast with a generous pour of salsa. 7. Bake in a preheated oven for 25 minutes. 8. Rest chicken for 10 minutes, before slicing into strips. 9. Add a base of brown rice to 4 food storage containers. Top each with a scoop of black beans, corn, additional salsa, cheddar cheese, cooked peppers and onions, and sliced chicken. Garnish with fresh cilantro and a lime wedge. 10. Store in the refrigerator (and enjoy any extras immediately). Can be kept refrigerated for up to 4 days. 11. Meal-prep FTW! Enjoy! I hope this is a hit. What's on your menu? Have a great Wednesday.

I woke up early this morning and was a bit surprised when I read the news alerts on my phone. Once the final result was through, I haven't read any news articles - there's been enough on Facebook - except for sports! I'm now coming to the end of my day. I had an extra session at kindy today, filling in for someone on vacation. It was a lovely group, not my normal kiddos, but 5 very sweet little people, including one cute little boy who decided I needed to be his 'buddy' for the morning. Since coming home, I've been untangling a skein of yarn a friend gave me. She ended up hating the garment she had knit from it, so said I could have it. It is a lovely color, but was knit doubled, so it is taking forever!
Tonight's dinner is a vegetable curry. I just found all the bits and pieces of veggies that needed to be eaten before they became inedible, and am cooking them up in a curry sauce. I've added some extra chilli - our bush is overgrown with them - so hopefully it will be tasty.

We are going over to SO's mom's for dinner. No cooking for me!! Pork roast is on the menu, don't know what sides but would guess mashed potatoes and corn. Let's see if I am right!
Made the chicken drumsticks last night, not a great hit with us. I think the cinnamon through me off. I think I would try it again with different spices on it. The meat itself was moist and good.

I think we're having hamburger patties with sautéed onions and gravy. I'm sure there will be potatoes and a veggie or two as well.
We all really enjoyed the drumsticks last night. Even my "no dark meat ever" Dh.

Not too sure about dinner. I ended up at a friends home for dinner last night & had a delicious veggie & venison stir fry.
Probably soup, as I am not feeling so great after my flu shot yesterday. Somehow the tip of the needle wasn't tight and most of the contents sprayed out, so I was given a 2nd shot. My arm is sore. I need to stay at home as I am expecting a delivery from UPS that requires a signature. I am also tired from staying up so late last nightwwatching the election results.

I have an appointment later this afternoon in Anchorage. I always try to go to Costco before heading home, so of course we will be having Lucy's chicken and some sort of bagged salad. Maybe even some kind of yummy bread.

I found some chicken breasts in the freezer, filled them with cheese, garlic and pesto, popped them in the oven and served with homemade pasta and a green salad. Unfortunately, there's nothing left.....
Oh well, there's always chocolate.

www.cookingclassy.com/italian-beef-stew/ (I changed a few things) Italian Beef Stew. I am making it now because it takes 2-3 hours to simmer. I typically make stews on the weekend but with ds home the rest of the week (teacher work days) and the need for comfort food, I figured today was a good day tk make it. Going to serve gluten free blueberry muffins with the stew. And its a high of 91° today. Because well I live in California. But the stew must go on!

Sorry, I wasn't here yesterday, I am a poll commissioner and I was at the polls watching people vote. We had 78% of our voters turn out yesterday - I hope they made the right vote for themselves. We snacked all day long yesterday so today I wanted something that had substance and taste. DH made up spaghetti and garlic toast - it was wonderful. We even had a glass of wine to go with it and I have taken a nap. Working the polls can wipe you out - it is FUN, get to see and talk to all the neighbors and we only had one long line which was when we first opened. The rest of the day, voters trickled in.

I made a small pot of chili. Guys can eat whenever they're hungry. I'll probably make a chili cheese burrito in a low carb tortilla for myself whenever the hunger pangs finally begin. Right now Momma needs a nap!

It's a cleaning out the fridge night because my grocery day is tomorrow. We polished off the PW's Hamburger Veggie soup and had grilled cheese with it. On such a lovely cool night, it really hit the spot. scrapmaven, your Burrito Bowl looks great. Another recipe gleaned from this thead.

Well, here's a situation. I am thinking maybe stir fry for dinner tonight? We had chicken last night but I would be ok with it again tonight. My dad is sick and DS will come home famished as he always does.
So chicken stir fry with rice and I will use oyster sauce as we can all agree to that. I have to drive to the store in a few min and I am nervous about doing so. I have a headache and it is behind my eyes. Is that a cluster migraine? I don't know what it is called other than wanting to take out my eyes to relieve the pressure behind them.

My son was playing cricket from 5pm to 8pm so we weren't at home for dinner. DSO cooked up sausages on the BBQ for all the boys and parents, so we had sausages in bread. I bloody hate sausages! But I was so hungry I ate one anyway. Someone else had bought a big tray of sandwiches from Costco. They were really good, especially the egg salad ones.
