That truism has never failed me. True. Curious though, would that hold up as well for sitting out, reheating etc? I'm actually making the green bean casserole for T day that way this year. I made it once that way just to eat at home as my dh loves the stuff. But I'm getting a little concerne if it would hold up to baking at home, then a car ride, sitting in my mom's oven for however long it takes us to finish everything etc. I'm probably over thinking it but the fake stuff is made for that i think lol. And I'd have the same issue with the broccoli rice casserole.

I'd love the recipe if you find it. What is bechamel? White sauce, a basic mother sauce: butter, flour, milk, seasoning -- here's Mario Batali's recipe. If the recipe calls for cream of mushroom, you can add mushrooms; if you like, or sauteed onions, or whatever.

They sure do! I only buy it once a year for my GMa's casserole. In my area, everyone must use Cheez Whiz at Thanksgiving, because if I don't shop early for it, my store is out of stock! LOL

The recipe is in her cookbook but I think on her website as well. If you need it let me know and I can post it once I get to a computer rather than my phone.

I swear the one my mom used to make was just rice, broccoli, maybe some butter and cheez whiz. So, no cream of anything soup, but, Cheez Whiz.

Cheesy Broccoli Brown Rice Casserole 1 cup cooked brown rice, cooked according to the package directions 3/4 lb. broccoli, roughly chopped (4 or 5 cups) and steamed for about 5 minutes 2 Tbsp. butter 1/4 cup diced onion 2 Tbsp. whole-wheat flour 1 1/2 cups milk 1 1/2 cups grated sharp cheddar cheese 3/4 tsp. salt 1/2 tsp. yellow mustard Ground black pepper, to taste 1/2 cup homemade whole-wheat breadcrumbs Extra-virgin olive oil Preheat the oven to 400 degrees. Combine the cooked rice and broccoli in a large mixing bowl and set aside. Melt the butter in a medium sauté pan over medium heat. Add the onion and cook, stirring, until softened, about 2 minutes. Sprinkle in the flour and cook for 1 or 2 minutes, until the flour begins to brown but doesn’t burn, whisking almost continuously. Whisk in the milk, watching for lumps. Sprinkle in the cheese, salt, mustard and pepper and stir until well combined. Bring to a simmer and cook, stirring, until the mixture is the consistency of very thick gravy, less than 5 minutes. Pour the cheese sauce over the broccoli and rice. Mix thoroughly and spread evenly in an 8-inch-by-8-inch baking dish. Sprinkle the casserole with the breadcrumbs and then drizzle (or spray) enough olive oil over the top to coat the breadcrumbs. Bake for 12 to 14 minutes, or until the breadcrumbs are nicely browned. Serve warm. Serves 4 to 6.

Sorry I got busy the other day and forgot about this. Thanks for the recipes and links. I'll check them out. I think it's off the table for Thanksgiving but maybe for Christmas.
I wonder if it would stay hot in one of those Pyrex warming bags? We go to my parents house and it's a half hour trip and then sometimes another hour or so before we eat. We already have the oven stuffed full with the normal dishes.

DD eats gluten-free, and anytime I make her a casserole I use plain Greek yogurt and shredded cheese. It's not the same, but it's still good.
