Costco has an awesome bagged mix with Brussels sprouts and broccoli stems and craisins that you could add extras to. Yeah..my location. Boonies of MN, I'm not kidding. Cindy, I like the Sweet Kale salad mix that you can get at Sam's club but it is also available at Aldi and other grocery stores. I might bring that for one of my sides, actually. I eat it all of the time but also brought it to a summer potluck and everyone loved it.

I'm making creamed spinach (beloved family recipe) because my brother asked me to bring it, but I don't consider it appropriate Thanksgiving food. I think something more crunchy is better, like just about any cooked-but-not-processed-into-oblivion fresh vegetable. Oh well, whatever.

Sure, it's very easy using cream-of soup, but you could sub white sauce and chopped, sautéed mushrooms if you prefer. For a small dish (8x8), use 2 lbs of frozen chopped spinach (or fresh, but we use frozen). Defrost, squeeze out excess moisture, and drain a bit. Mix in one can of cream of mushroom soup, a little milk if needed, and salt and pepper to taste. My mom does it in the food processor and it comes out like baby food. The rest of us mix everything with a wire whisk and there's more texture to it. Place in buttered baking dish. Top with shredded cheddar cheese and sautéed fresh mushrooms. Usually I use whole mushrooms and push them stem down into the spinach, so just the cap shows, one for each serving. But last time my brother made it, he sliced the mushrooms and laid them flat over the top, and it looked more elegant. As elegant as it gets with frozen spinach and cream-of soup, anyway. Then bake in a 325 degree oven till heated through, maybe half an hour? I might leave it covered till the last few minutes. ETA I'm guessing if you used fresh spinach, you probably ought to chop and cook it first.

i would add another can of beans and a little more milk (maybe a quarter cup more?) We made it in a 9x13 casserole dish and I think that was a little big for the recipe as it is posted.

Fall Brussel Sprout Salad 12 oz brussel sprouts, shredded 1 diced pear 1/4 C dried cranberries 1/4 C crumbled gorogonzola or feta 1/4 C chopped pecans Dressing: 2 Tbsp olive oil 2 Tbsp balsamic vinegar 1 Tbsp maple syrup 1 tsp Dijon mustard Salt and pepper to taste Before you assemble the salad, slice 2 jumbo shallots and fry until crispy in 2 tbsp olive oil. When they are done, assemble salad and serve. Do not skip the shallots- they add something special!
