How about roasted cauliflower or Brussels sprouts?

My assignment is funeral potatoes and green bean casserole. (To be fair, I volunteered to do both of those.) My cousin is making seven layer salad, which is my favorite part of Thanksgiving dinner. (It's got mayo and cheese and bacon, so it isn't really a "salad" in case mikklynn's family might be interested. ) I just checked our assignments. There will also be corn, sweet potatoes, regular potatoes, black olives, and a veggie tray. Plus whatever veg is garnishing bloody marys this year.

I really try to fill up on veggies before the meal. As as for a veggie for the meal, I'd bring fresh green beans. In a separate pot, I melt butter, add craisins, and simmer to rehydrate the craisins a bit. I steam the green beans and then toss everything together. Reasonably healthy and green.

I'm bringing a very sweet broccoli pasta salad. Last time I took it, they could tell I "lightened it up", but I'm doing the same this week.
I'm also bringing green bean bundles, but DH thinks we will just make them as "deconstructed" bundles this year. We did it once before and everyone had a fit.

No I know would touch salad on Thanksgiving- bagged lettuce or otherwise! If you will be there awhile before dinner, take a veggie tray. For the actual meal, green bean casserole or corn casserole, I suppose.

The last few times I have brought a salad and it actually went over really well. All gone. I think because some of us like something a bit lighter? I made a layered salad one yr, and last yr like a olive garden type salad. Already have turkey, dressing, mashed pot's. and squash.

ETA - I cleaned up the formatting here.
I make an asparagus/green bean salad with homemade pesto and grape tomatoes. It's pretty and delicious, and travels well.
Asparagus and Green Bean Salad
This salad is an Easter and spring/summertime favorite, but I make it year round. It also works well with extra beans in place of the asparagus.
1/2 lb. green beans, 2 inch pieces 3/4 lb. asparagus, 2 inch pieces 1/2 red onion, thinly sliced one pint grape tomatoes
1 lemon, zested and juiced 1 c. flat-leaf parsley, divided 1 clove garlic 1/2 c. basil 1/4 c. grated Parmesan-Romano 1/3 c. EVOO salt and pepper
Cook beans for two minutes in boiling, salted water. Add asparagus and cook 3 additional minutes, 1-2 minutes if using pencil asparagus. Drain well and cold shock in ice water to stop cooking. Drain on clean kitchen towel and allow to dry completely.
Combine beans, asparagus, half of the parsley and all of the onion in a shallow bowl.
Combine lemon zest and juice, remaining parsley, garlic, basil and cheese in food processor. With processor running, add EVOO in a stream. Season with salt and pepper to taste and pour over salad. Stir in tomatoes.

My BIL has "ordered" me to bring a salad because he liked a salad I made for our July 4 cookout. I'm making a salad of mixed greens with sliced apples and/or pears, Gorgonzola, pecans, maybe some Craisins and I'm looking for a good, not too sweet balsamic vinaigrette recipe if anyone has one.

We had an early Thanksgivung yesterday at my mom's house. I took cornbread casserole, Tyler Florence's citrus sweet potatoes, green bean casserole with Swiss cheese, and we also had roasted Brussel sprouts with bacon. We had an hour drive and timed it so it all came out of the oven right before we left. When we got there it was all still hot and delicious!

That's too bad, check your grocery store, mine has the same salad but in smaller quantity, I think it's called sweet kale salad. It would make the salad prep a snap rather than chopping a ton of Brussels sprouts etc.

I'm bringing Southern Pineapple Casserole. It. Is. Fabulous!! Sweet and very tasty. I'll try and post the recipe. It is seriously SO good! My father-in-law loves it! My sister-in-law who is having T-Day (my side of family) requested that I bring it....
Southern Pineapple Casserole
1 cup of sugar 6 tablespoons of flour 2 cups sharp cheddar cheese 2--20 oz cans pineapple tidbits drained: (reserve 6 tbls juice) 1 cup of Townhouse crackers (crushed) I use a whole row of crackers, sometimes a few more 1 stick of melted butter
Mix sugar and flour. Add cheese, then pineapple. Pour into a greased (I use Pam) small casserole dish. Combine crackers, butter and pineapple juice. Spread evenly over top of pineapple mixture. Bake 25-30 minutes in a preheated 350º oven or until it starts to brown and bubbly. Enjoy!
For the cans of pineapple, I use 1 can of tidbits, and 1 can crush.

Trying a new fruit salad this year modified from a Trisha Yearwood recipe -- 3 apples, peeled and grated, 1 cup of orange juice, 8-oz can of crushed pineapple, and flake coconut. Trisha's recipe called for sugar. I don't think that sounds like it needs sugar. I'm also going to chop up some craisins.
This is to replace the Jello salad that no one in my family would touch -- green jello, cream cheese, crushed pineapple. Sooooo easy. I'm going to miss that jello salad.

I can't stand mayo or eggs, so I won't touch it! It does look pretty and everyone else likes it. My mother makes this All. The. Time. I can't stand mayo and wouldn't touch the stuff for years. About 10 years ago she started making a tiny one just for me with sour cream instead (and no bacon since I don't eat red meat or pork) and i can't get enough of it now. As for the actual question? I'm in charge of dessing and chocolate pie, no healthy stuff coming out of the anxious house this year. lol Oh-and kale salad? I think it is Taylor farms brand. Or the one that looks just like it. It was on sale at publix last week and I noticed the space was almost empty.
