Tonight I think I'm going to make Garlic chicken w/brown rice, peas and scallions. It's a Sauteed and very easy dish. Only 2 people will be home for dinner and they both like this dish. I might bake, but I'm not sure. I'll see if my energy shifts into the on position.

On my own again tonight, as DH is off to Sweden. I'm hoping he'll get home on Friday, as Lufthansa pilots are threatening strikes again. I have some ground beef, and it will be something, but I'm not sure what yet - maybe chilli, maybe 'my' chow mein.
ETA: went with Chow Mein. Simple and quick. Brown the meat, add mixed frozen veggies and a packet of curry flavoured quick noodles. Let bubble until noodles are soft and veggies are cooked. Eat!

I was not inspired at the grocery store, SO ended up with leftover Chinese last night and me a PB&J with chips and dip. LOL
Tonight is soup and grilled cheese.

low key tonight, I have to start prepping for my baking tomorrow (carrot cake cupcakes and chocolate pecan pie)
I think a grilled cheese (Michelle!) and can of tomato soup are the ticket.

Every year for both Thanksgiving and Christmas, I am so focused on the meal for the actual holiday, that I forget to plan meals for the days prior to or after the day, and end up scrambling at the last minute. I was determined that this year would be different so I planned ahead. You see where this is going, right? Yep, you guessed it.....schedules changed and what was on the menu for tonight wasn't going to work with the who and how many will be at the table. So.... Tonight we're having Mississippi roast in gravy, rice, roasted broccoli, cauliflower, and carrots, and applesauce. On the plus side, I stashed what I had already prepped and/or prepared for tonight in the freezer to be pulled out on one of the many days I don't feel like cooking.

Both kids are sick (fever, sore throats, headaches.....I think I understand why DS didn't do as well as expected on Sunday) and they don't have much of an appetite either, so the leftovers from yesterday's chili was enough for the three of us.

I told SO that he's in charge of dinner tonight since I have to cook on Thursday He's either making green bean casserole or just pasta and sauce (I'm sure we have some frozen meatballs in the freezer we can make too). I guess I'll find out when I get home

We are going to have moose burgers and either frozen fries or pasta salad. I have been fighting off a cold and I think it's got its grasp on me. My throat is feeling scratchy, I am choosing to ignore it. I have so much to do this week.

I had last-minute shopping to do and the two parking lots I was in were a nightmare. Seriously, people. A little courtesy goes a very long way these days!! I decided to make tonight easy, having been in the same mind set of Trixie Bender about not being prepared for the days before Tgiving- so I got a fresh pizza and will add toppings to it. A good salad and maybe a movie tonight. I threw out some old grains I had in jars - I live in the woods and so I threw them off the deck and now the crows are all having their supper. Happy eating, awesome birds! Thanks for the thread.

Get well wishes to several Peas and their families. I'll be making spaghetti with meat sauce and a salad. Apple pie for dessert. All that's for DH who is working LONG hours this week. He's been coming home dead tired and a little grouchy the last few nights and I'm trying to make it better with some TLC. I need to have a lighter dinner; vegetable soup sounds good to me.

I tasted my peanut butter crackers at lunch a little bit, so I think we'll have bbq meatballs over rice, with broccoli and applesauce tonight. Since we weren't crazy about them to begin with, I won't mind as much if I can't taste 'em and it'll be one less thing in the freezer! lol

Probably pasta with frozen meatballs and a salad. I'm swamped with stuff to do and that's what I've got. Lol
And frankly they are lucky I'll be home to do that as there was a crisis at work that nearly had me driving 2 hours each way to deal with an issue starting at 2 pm the earliest, but I was able to resolve the issue for now and I will be home to make them dinner. Else I'd have been home between 7:30&8pm

They'll never know how close it came. ( also would have involved working Thursday morning leaving thanksgiving in DH's hands. >< it was this close. )

Last night's Moroccan meatball soup was delish! Some of you pinned it for later. It does need a little flavor for the broth, so get out your garlic powder, salt and pepper.

I have missed you all. It's been a crazy couple of weeks. I found this recipe for homemade bread a while back and finally tried it this week. Truly, it's the easiest bread recipe ever. And it's delicious. When I baked the first loaf, it was inhaled in 10 minutes. Teen boys. Note: I tested it with rising times at both extremes - 8 hours and 22 hours. There's really not much difference. If you work outside the home, you could easily mix this up in the morning - four ingredients and blend for 60 seconds. It couldn't be faster. DD is getting in tonight so there will be 4 of us home, DS is heading on to my mom's on the other side of the state. We are having homemade cheese enchiladas and salsa. That's all I got in me since I also have to make something for the office for in the morning and start figuring out what I am packing to go out of town.
