I just found out that I am supposed to bring some sort of corn dish for Thanksgiving. Do you have any ideas? A good tried-and-true recipe? I'm thinking about some sort of creamed corn, or a corn casserole, maybe. I am thinking that something in the crock pot might be nice because I could easily tote that along and just plug it in somewhere. It would not take up any oven space.
I also need to bring a dessert. Still thinking about that one.

This is a favorite of ours...
Baked Corn Casserole
1 8.5 oz box corn muffin mix 1 8 oz cup sour cream 1 15 oz can corn, drained 1 15 oz can cream corn 1 egg 1/4 cup margarine, melted 1 cup shredded cheddar cheese
In a large bowl, add the muffin mix, sour cream, corn, creamed corn, egg, margarine and cheddar cheese. Stir by hand until thoroughly mixed.
Pour into a greased 1.5 quart casserole dish or a greased 8x8 pan/dish. Bake at 350 degrees for 1 hour. To test for doneness, a knife inserted in the center should come out wet, but clean. Serve hot.

^^ Both of those above! I skip the cheese that is mentioned on the second one posted. Everyone always loves it. It is super simple to make.
Bake it in a pretty casserole dish and it will be a hit!
It doesn't make a huge amount, so I don't think I would do it in a crock pot, unless you have a smaller one. I would still bake it in the oven, but you could use the crock pot bowl. Then just pop it back in the crock pot part and put it on low/keep warm when you get to your destination.

We've been making Corn Pudding for years - it is so good. I have found that you have to use JIFFY mix though - other mixes just are not as good in this recipe CORN PUDDING RECIPE

I like fried (sauté)(frozen white) corn with onions and a can of fire roasted peppers (mild).

My corn casserole is simpler, just creamed corn, regular corn, egg and ground up saltines. I mix all that together and sprinkle the saltines on top with pats of butter. 1 can, 1 can, 1 or 2 eggs, half a sleeve of saltines.

I make a variation of this one..but sadly I can't find my recipe.. I know I use one can of creamed corn and a can of sweet yellow corn and use the French's onion thingys in it...

This is a delicious recipe for a different way to serve corn. I make the cornbread bake too but this recipe for creamed corn is really good. It's nothing like the canned creamed corn.

I usually triple this one and cook it on low for several hours. I think it's supposed to be a runny cosistency, but I cook it until it's more like a pudding. It's so amazingly good. Confetti Scalloped CornI love the crockpot for potlucks.

This is the one I make, only I use a stovetop version that takes about 20 minutes. My family loves it and requests it every time corn is mentioned. We first ate it at a Rudy's in Austin, TX. Since I found the copycat recipe, now no other corn recipe will do.

The jiffy corn casserole is probably what the host intended. Personally, for thanksgiving, I just like plain corn- because I like it with mashed potatoes.

I do the Jiffy cornbread one as well -- we call it "that corn stuff" -- I add a beaten egg and about 1/4 cup sugar. It is one of DS's favorites

Glad I found this thread. I was just talking to my DD about Thanksgiving dinner. We agreed we are "green bean casseroled out". Totally sick of it and were trying to figure out what else to make that everybody would most likely, well, like.
All of these corn recipes look really good.

These are great.. especially the ones that use frozen corn, for some reason I don't care for canned corn. At. All. And I married into a family that thinks corn's for cows so I don't get to enjoy it too often! So anyway I'm bookmarking this thread for some future use. Hopefully.
