I googled and it says 20 mins per pound. I've got a 15.5 lb bird. That would be over 5 hrs. I'm using Alton Brown's brine method. One person on there said it cut down on the time. Any idea how long this should take? I want it done by 1:30 so we can eat by 2. If it's 20 mins per pound, I need to get it in now. But I don't want it to be over cooked.
ETA - Found my answer. Per AB's site (I missed this part last night) it takes 2-2.5 hrs for a 14-16 lb bird. When using his method, you cook it for 30 mins on 500 then lower it to 350. So this must cut the time way down.

Don't forget to factor in rest time before carving. I'd get it in now.
