Happy Thanksgiving!
How much water should I add to cut up/peeled potatoes if I want to cook A LOT of potatoes in the insta pot? More than 1 cup of liquid?

Nope, just 1 cup should do it. Potatoes actually have liquid in them too. If you are really nervous, you can always use 2 cups of water and pour out the extra after cooking and before mashing.

You could use broth as well. Extra flavor.

Scared but I might try it!! How long to cook and setting? I pinned a recipe and it said to cook potatoes for 7 minutes in a pressure cooker. I don't have an Instant Pot, so I don't know about the setting. I just plan to set the timer for pressure cooking on mine.

I made mashed potatoes last week and put the broth and butter in with the potatoes for 7-8 minutes on manual setting and then mashed them directly in the pot when they were done. Added a little cream and salt and pepper and they were delicious!

Added a little cream and salt and pepper and they were delicious! I cut the potatoes into large chunks - I don't peel them, because we like country-style potatoes. I put in a cup of water and cook at high pressure for 7 minutes. I then mash in the pot and add Neufchâtel cheese, salt, and fat-free half and half.

I am so going to try this!
The only thing I hate about our new home is the glass top stove in the kitchen. There is not a chance I will ever cook anything on it that doesn't boil over and make a huge mess that I have to clean up. I find myself using small appliances whenever I can so I don't have to deal with that!

I did peeled and quartered potatoes (probably medium size) for 8 min, quick release. I used a strainer basket and poured out the leftover water.

These were a total win for me! I put about two cups of water in, put in enough potatoes to reach to the "10" line on the side of the pot & cooked on manual for 8 min. Drained the liquid & mashed right back in the pot.
I loved not having to babysit a huge pan of boiling potatoes today!

Instant Pot saved the day when the turkey was done MUCH earlier than expected. 3 lbs of potatoes peeled and quartered, put in with a cup of water. 7 min under pressure and 5 minutes natural release, then QR. potatoes were perfectly done and mashed up beautifully - much faster than bringing a whole big pot of water to a boil and then boiling the potatoes.
