the ricotta mixture used in lasagna? I've got a bit leftover from making today's big pan of lasagna, and I'm hoping I can freeze it to use with an upcoming batch of lasagna soup. It's got ricotta, egg, and some grated parmesan and asiago, plus some parsley flakes.
I've never tried to freeze ricotta before, so I'm wondering if any resident pea cooks have done it? TIA

I don't know for sure but since you can freeze a whole uncooked lasagne, I assume you can freeze the component parts.

Yes! I freeze it in stuffed shells often and for soups etc I freeze it in ice cube trays and then after it's solid I transfer to ziplocks

Yes, I have successfully frozen and then used ricotta. I am sure the mixture would be fine.

Yup. I have a baked ziti recipe that only uses half a small container. So I freeze the other half and I'll make it again in a month or so. I've done it for years.
