my tried and true recipe is more shortbread like
2 C. flour 1 ½ sticks softened butter ¾ C. sugar 1 egg 1 tsp vanilla coloured sprinkles/sugars (optional)
Cream butter and sugar at med. Speed. Add egg and vanilla and beat until well-mixed. Scrape down sides of bowl, then add flour. Blend on low speed until just combined. Do not overmix. Gather dough into a ball. Flatten into a disk and wrap lightly in plastic wrap. Chill 1 hour. Roll on floured surface and cut out. Decorate with sprinkles if desired. Bake at 325 13-15 min. being careful not to brown.
Makes @ 2.5 dozen.

Try this one. I'm sure you could sub out the vanilla and almond flavorings for lemon. We liked them and will make them again this year. Rolled Sugar Cookies

My recipe includes cream of tartar. That gives it a different flavor than with just vanilla.

I like this recipe as I think using the powdered sugar eliminates the grainy texture with other sugar cookie recipes.
Easy sugar cookies
1 cup butter, softened 1 1/2 cups sifted confectioners' sugar (I use just a wee bit less) 1 egg 1 teaspoon vanilla extract 1/2 teaspoon almond extract (can use lemon if you want)
2 1/2 cups all-purpose flour 1 teaspoon baking soda 1 teaspoon cream of tartar
In a large bowl, cream together the butter and confectioners' sugar until smooth. Beat in the egg and stir in the vanilla and almond extract. Combine the flour, baking soda and cream of tartar; blend into the creamed mixture. Cover and chill for at least two hours (I chill mine at least over night). Preheat the oven to 375 degrees F (190 degrees C). Divide the dough into two parts. On a lightly floured surface, roll each piece of the dough out to 3/16 inch in thickness. Cut into desired shapes with cookie cutters. Place cookies 1 1/2 inches apart onto greased cookie sheets. Sprinkle cookies with plain or colored granulated sugar. Bake for 8 minutes in the preheated oven, until lightly browned. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

I like Suzanne's Almondine Sugar Cookies. Here is the recipe. Do you know if you use salted or unsalted butter? Unsalted. Though I suppose in a pinch you could use salted and just leave out the salt.
