I stopped in a Costco that I don't normally go to and found a big chunk of paneer cheese. I'm looking at it now and it's huge. I'm afraid we won't be able to eat it all in 5 days (the package says to use in 5 days).
Has anyone had success in freezing paneer cheese?

Well a google search says you can freeze it, but do it in cubes.

I have frozen it, but prefer it fresh. I find the texture changes a bit on thawing.

I have no problem eating large amounts of paneer cheese. Just have Indian food two nights in a row.

My grocery store has a huge Indian food section in the frozen food aisle and there is a heck lot of ready made frozen meals with paneer in them. I am sure it would be fine.

Thanks for the responses. It's a two pound chunk of heaven! I wish my regular Costco carried it. The Costco I found it at is one I don't go to much because it is kind of far away. Maybe the next time I'm at that Costco I'll buy two of them!

I have frozen it but prefer not to--it does change the texture a bit, and also when it's frozen it spits more when you fry it.

Oh man, I'm so jealous! If my Costco sold paneer, all my dreams would come true. I have never eaten this cheese, so it is now on my list to locate and try. I googled it to find out more about it and I saw several recipe sites that say it can be made at home. Here is a link to one that says you can make it in 30 minutes using milk, lemon juice or vinegar, and a bit of salt to season. A new restaurant opened near me and they have a sandwich wrap made with vegetables and this cheese. It was so good. I now crave it all the time.
