I find myself suddenly, abundantly supplied with Brie. We have a six inch round of plain brie and a wedge of flavored brie. Having never had brie before, I am wondering what to do with it. Also, can some of it be frozen ? There are only two of us and that looks like a LOT of brie.
So...what are your favorite uses of brie?

We would take phyllo pastry and put a piece of brie in it (about 5 layers of phyllo buttered) and my mother would use apricot jam on top of the brie but I don't know why. I hated apricots and I was the only one who ate it. Wrapped this up and baked in the oven until crispy looking at 350F. I don't know where the recipe is but I will look for it tomorrow if you want it.

Stuff it inside chicken breasts, then wrap bacon around the chicken....that's delicious!!
Maybe we need to have that for dinner today.....

Caramelise some onions with a little honey. Place on top of the Brie, wrap in puff pastry and bake until risen. And then be careful you don't burn your tongue eating it

Brie and bacon panini with cranberry sauce (or something similar), toasted so it is all soft and oozing.
I love brie and often have it just with crackers and apple/grapes.
I do like the sound of some of the other options here.

How does someone become overly endowed with Brie? Can it happen to me - I wish, I wish! Well, believe it or not, by going to the Salvation Army food bank. They had a lot of donations yesterday. Part of the line you choose from items and part of it is bagged up stuff. We selected a round package of brie as we had never had it and nothing else on that shelf looked tempting. Then one of the pre-filled bags they gave us had a wedge of brie in it. So yeah, we are overly endowed and thinking there is no way to use it all up in a timely manner. But there are some very interesting options above.

My favorite is a toasted brie, turkey, green apple slice sandwich.
But I would also ask ... what do you already have? I hate having to go out and buy a ton of extra ingredients for a single meal that then languishes in the fridge until it gets tossed because it isn't really good for much else. I saw a recipe not too long ago that used brie to make a sauce for pasta (with basil and bacon) that looked good and would use ingredients that I already had laying around.
There was also one that had an arugula/mushroom sauce for chicken. The mushrooms and arugula could be used for at least one other meal so you aren't spending a whole lot for a misc. meal. Or even substitute spinach for the arugula which may even cost less and equally easy to include in other meals.
(This said from someone who has a fairly small food budget and doesn't always have the ability to spend a lot of money for a single meal.)

Wrap generic crescent roll dough around it and bake. Slice up some tart apples and get mango chutney to room temperature. When the bready brie comes out of the oven, slice it like a pie and enjoy. Yum!!!

There are tons of great suggestions above but we also like it diced small with tomatoes and red onions and some basil and mixed into hot pasta as a main dish.

I usually cut slits in the top and drizzle honey over it then lay it on a baking stone and bake about 15 min till its soft and runny then spread on slices of a baguette and top with sliced green apple and if we have it strawberry jalapeño jelly! We also love it with turkey in a sandwich or even on a burger!

I bake it with either apricot jam or raspberry jam. Then eat it on crackers or bread. I prefer it without the phyllo or crescent roll wrapping.

I know you can eat the rind, but I have never cared for it. The first time I tried it, I thought it was terrible! Then I had what was probably better brie, and YUM! Here's a link of how to eat, if you've never had it linkEnjoy!

ALL of the suggestions above. They are all delicious s, it's such a versatile cheese. ( if apricots are not your deal raspberries work too ) You don't have enough Brie. Lol

Instead of the phyllo dough mentioned above, I use Pepperidge Farm puff pastry. It's in the freezer section. Cut the rhind off of the brie, put apricot jam and Craisins on top, and bake according to the time on the box. Delicious! I was going to make this for the Super Bowl and forgot it - I think I'll make it tonight!

My absolute favourite: Lemon & Garlic BrieScroll down until you get to the second recipe for the Lemon/Garlic one. SO good!! I like to slice off some of the white rind from the top before I add the lemon/garlic mixture so it seeps into the cheese better. Then get some crackers and enjoy!

I make these easy appetizers/snacks:
Brie Phyllo Cups Recipe
(Sometimes I make my own phyllo cups, but frozen Mini phyllo shells I keep in my freezer make this appetizer super quick and easy)
TOTAL TIME: Prep/Total Time: 20 min.YIELD:15 servings
Ingredients
1 package (1.9 ounces) frozen miniature phyllo tart shells 3 tablespoons crushed gingersnaps 6 ounces Brie cheese, rind removed, cubed 1/4 cup spreadable fruit of your choice - I use mostly use raspberry jam, but have used apple, grape, blackberry, apricot,etc. I have a jar of plum/tarragon I'd like to try)
Directions
1. Preheat oven to 325°. Place the tart shells on an ungreased baking sheet. Sprinkle about 1/2 teaspoon gingersnap crumbs into each shell; top with Brie and spreadable fruit. Bake 5 minutes or until cheese is melted. Yield: 15 appetizers.

LOL! I'd probably skip the IP for this one. But if you wanted to try it, I'd use pre-cooked Bacon, and then be sure to brown it under the broiler after cooking in the IP.
