I know Scrapmaven said she wouldn't be on-line much this week and I wasn't sure if Leannec would run this thread, so since I did not see one started I thought I would help out!
Today dd is home sick again. Had to pick her up early. Just needs another day of rest. Due to her celiacs, dysautonomia, and POTS any illness affects her. Faster heart rate, higher blood pressure, and loose stools with tons of gas.
Tonight is honey lemon chicken stir fry with fried rice. Easy and has left overs!

I had an extra day of kinder today, filling in for another carer whose husband was having surgery. Fun day - I was in the German group, and the other carer is an older German woman, who speaks no English. It really stretches my German to the limits when I fill in with Renate!
We are having chicken curry for dinner. Curry is cooled, rice is on the way. Now waiting for DH to be home.
And for all who commented yesterday, the Valentine's desserts tasted as good as they looked. The chocolate one was AMAZING - so rich.

I was trying to decide what to make for dinner tonight (a lot of food on hand = too many choices), when dd texted that her plans had changed and would be here for dinner after all. That narrowed my choices and I'm making one of her favorite dinners. We're having an Italian chicken and vegetable sheet pan dinner, salad, jello (masquerading as our fruit), and rolls.

I took leftover Italian beef out of the freezer and I guess we'll eat that on hamburger buns tonight. I really need to get to the grocery store and buy some damn vegetables. We've been eating carrots and spinach for days now.
Last night's chili rice turned out to be a big hit. For some reason, the 7yo now loves it. LOL

We're having pasta and meatballs with a garden salad.
I'm still trying to eat low carb, so I have to watch the serving size with my pasta. It's the brown rice and quinoa pasta I get from Aldi.

We going to one of our favorite po-boy sandwich shop to get their famous Roast Beef Po-Boy. We'll pick it up and bring it home because it is so messy but oh, so good!!!! Plus, we have a 50% coupon off the second po-boy...can't go wrong with that !!!!!!

She wants our famous mother and daughter egg scramble for dinner. I think I have some English muffins in the freezer. That sounds good!

We're taking dd#2 to riding lessons tonight because Grandma, who usually takes her, is in Las Vegas That means a late dinner ... luckily we have leftover Chinese food I'll cook up some fresh rice when we get home ...

Thank you for starting the thread, @calimom2. I hope your DD feels better soon.
I'm just home from Spanish class, so now I'm going to enjoy a cup of tea before I put the bunnies to bed (or in their hutches....). Dinner was pork chops, potatoes, ratatouille and baby corn, and now I'm hungry again. I might have to raid the pantry, I think there are some cookies in there somewhere.

It'll be breakfast for dinner at our house too; scrambled eggs, sausage, home fries, and English muffins. The Birdhouse Lady my son does his famous breakfast scramble for Sunday breakfasts that everyone just loves - scrambled eggs, home fries, sausage, bacon, all mixed together. Good stuff - is yours like that?

I'm skipping yoga tonight. Long day, long story...I'll walk my 2 miles instead.
I just put a pan of stuffed peppers (red and yellow of course) in the oven. That's for DH. I'm having black beans and rice.
Lacing up my walking shoes now and heading out. It's "cold" here today...55, so I better wear a sweat shirt.

I have no ideas for tonight. Perhaps some sort of meat with some sort of vegetable, and maybe some sort of fruit. I could put chicken, fish, pork, or beef in the meat category. Then for a vegetable it could be carrots, cauliflower, broccoli, peas, or corn. For fruit we have oranges, pears, and apples along with a jar of peaches. Just one from each category and call it a meal......I'm not really hungry for any of that. I want someone else to fix the meal and I will just show up and eat it. Since that isn't going to happen we will probably have beef, peas, and peaches........

I am beyond exhausted, so instead of the Italian sausage rigatoni I was going to make, I stopped by a BBQ shack that is on my way home from.work. I think their food is better in the summer because they do more volume, but it still hit the spot. I will make the rigatoni tomorrow when DS comes home for the weekend. I bought the most limited use kitchen appliance ever (Johnsonville Sizzling Sausage grill) and I know ds will want to learn how it works. (And he will probably try to steal it for school at some point. Lol)

I put chicken breasts with BBQ sauce in the crock pot before work. We had that on slider buns with baked beans, strawberries, raspberries & blueberries.
Tomorrow I think we will go out because we have tickets to the Bodyguard.
