Tonight I think I'll make chicken Risotto. Dh can have salad, too. I'm going to search for some new instant pot recipes to try this week. I love using my IP, but my recipes for it are too limited.
What's on your menu?
Have a lovely Tuesday.

I don't know what dh and dd are eating but I'm having chicken breast, asparagus and corn on the cob. I assume they're having the veggies as well but have no idea what protein they'll have.

I think I'll make split pea soup with my leftover corned beef and the cooking water from said corned beef. I actually like it better made with corned beef than with ham. If I get to the supermarket, we'll have French bread with it, too.

I made spaghetti and a meat sauce, which is something both kids like. That might change next week, though.

We're having sesame beef and vegetables, rice, asian brussels sprout slaw, egg rolls (I have learned that they go with asian meals just like canned corn goes with ham and canned cranberry sauce goes with turkey. ), and because this meal doesn't have enough vegetables, I'll roast green beans and cauliflower.

Chili
Yesterday I did make the dill pickle soup. It was interesting. A bit too pickly DS felt. But he said I could try it again with a bit less pickle juice

I posted on yesterday's thread today that the recipe I posted yesterday was a big hit. Everyone loved it. Which is great because these 2 don't like to go outside their comfort zone. I will bring them back to reality and make cheeseburgers tonight. Some sort of salad and fries.

More leftovers here tonight. This time, a repeat performance of last week's lamb and chickpea curry - don't worry, it has been frozen in between!
I have just realised what my biggest problem with the start of daylight saving is - I don't realise it is nearly dinner time, as it is so light out side, especially with the sudden outburst of sunny spring weather we are having. I was sorting photos and choosing page sketches for an album I want to get done (Barcelona, Jan '14) and all of a sudden it was 6:30pm!

I'm going Southern tonight: skillet fried ham, biscuits with sausage gravy, and hash browns. And Nutter Butter Cheesecake for dessert. Sounds terribly unhealthy!

Kait and I are home alone for the week. Dh is in Dallas on a business trip.
Last night we had tuna sandwiches and grapes!

Right about now I'm glad I did all that cooking on Sunday. While I head out to tutor this evening, DH can have leftover quiche and some corn. My tummy isn't feeling that great, so I'm just having some dry granola and fruit.

I'm trying my hand at this Ham and Cheese Slab Pie for the first time. It's all put together and it will go in the oven at dinnertime.

Oh goody, it's time to think about what to fix for food again. I don't know why this time of day always takes me by surprise, it comes every single day.....Tonight for our dining pleasure we will be having ground beef and pasta. There will be a tomato based sauce with the meat. There will be some sort of cheese on top of this marvelous wonder that will appear as if by magic on the dining room table around 6 pm......

Since we had tacos yesterday, no taco Tuesday for us. I have some frozen crab legs and probably just a vegetable with them. Daughter loves them and quick 20 min. to steam and ready.
She is such a picky eater, I struggle every week. I'll have to follow these posts more.

We are having a repeat from last week - beer battered fish courtesy of the Gorton fisherman, blue box mac and cheese and raw veggies and dip (last week, I believe it was corn). The fish is surprisingly good!

Welcome back to the dinner thread, ingrid6 ! Haven't seen you in a while. We're having orange chicken and fried rice. It's easy to make and cheaper than going to Panda Express.

Could you please be my personal chef? Your meals always sound so good, and I bet you put a lot of effort into them. If I was making eggrolls, I'd say, we're having eggrolls, and that's your vegetable too. And your meat. Bon Apetit! I'm making a risotto of sorts, with dreaded cream soup and instant rice, because that's all the energy my fibromyalgia will give me today. Maybe I can pull some fish or chicken out of the freezer. Don't die of shock now.
