Is there a second "recipe" on the box? Sometimes they have a "for more cakey" recipe that calls for more of something and less of something else. I can't remember, but I *think* it is less egg, more oil?

I'd just make it with the one egg. It might have a different consistency or something like that. But really, in my humble opinion, it's hard to totally ruin a brownie unless you over bake it. Chewy, cakey, gooey, whatever. As long as it's chocolate!

since the egg is just there as a binder and for moisture, you could probably substitute it with apple sauce, more water or oil.

Applesauce will work perfectly to replace the egg or yogurt (plain or vanilla)

1/3 cup applesauce equals one egg. I think it would be fine for brownies, I wouldn't do it with a cake though.

I have done this before for muffins with great results: Substitute 1 tablespoon cornstarch plus 3 tablespoons water for each egg called for in recipe. Here's a nice list of alternative substitutions: www.foodsubs.com/Eggs.html

Contrary to popular opinion, most baking is not an "exact science". I would make it with just one egg. It will be fine.

I've used applesauce, as mentioned above or tablespoon of mayo. Sounds gross but isn't- you can't taste it.

Last year I was baking a cake and it wasn't until the cake was alost done baking and I was cleaning up that I looked over and realized I forgot to put in the 4 eggs !!!!! The cake was just as good; a little more dense, but still delicious.

Well this won't help you this time, but...
I ordered provident pantry powdered egg (in [HASH]10 can) a while back and I opened a can. I thought I would use it for camping. While I have not yet used it for scrambled eggs (although the reviews are great), I now prefer it for baking. It works great and it is so convenient to never run out of egg! Really handy to have on hand!

One of the doctors that I used to work for always substituted applesauce in everything she baked. OMG it was always so good and so moist, especially her cakes!
