I usually bring a cold pasta salad - bow tie pasta, broccoli, black olives, shrimp or chicken, pine nuts, etc., tossed in Italian or Greek dressing. However, I am assigned to the "meat, chicken, or casserole" category at the church picnic this weekend. Pasta and salad are a whole different category. I'd love any go-to recipes for future reference, but this dish is going to have to be made on Thursday, transported to a campground, and refrigerated until Sunday at lunch. I could bring a crockpot for cooking on Sunday morning. My mind isn't cooperating with this assignment. At the rate I am going, it will be cold fried chicken.

I am no good at a recipe as I usually just wing it. I use creme of broccoli soup and milk etc. I bet you could find a good one on Pinterest.

7 layer dip and tortilla chips. Not very original, but always gets wolfed down.
ETA: Just saw that you're assigned meat or casserole. How about the standard funeral potato casserole?

if I had to bring an item that can be warmed in a crockpot, I would do some kind of bbq pulled pork. that keeps well in the fridge, heats well and can sit in a crock pot without getting all dried out.

There was a recipe on Good Morning America this week that would travel well. It's named Seven Layer Potaco Salad- that's not a typo. It's like a layered taco salad over potatoe salad. You could have ingredients made and assemble at campsite. Looks festive too.
I'm thinking it counts as an entree, not salad due to meat and extra heft of the potatoes.

Inside out Stuffed Pepper Casserole Prep Time: 10 mins Total Time: 55 mins Servings: 4-6 Ingredients
2 cups chicken broth 1 cup uncooked rice (not instant) 1 lb ground beef or crumbled Italian sausage 1 medium onion, chopped I can (15 oz) diced tomatoes, drained Minced garlic Garlic salt, onion powder, Italian seasoning to taste 2 medium bell peppers, seeded and finely chopped 1 1/2 cups tomato sauce (could add an extra 1/2 c) 1 cup shredded cheddar cheese
Directions
Boil broth and pour over uncooked rice in greased 9 x 13 " pan. Brown meat with pepper and onion and garlic. Drain well. Season with garlic salt, onion powder, Italian seasoning. Stir in diced tomatoes and sauce. Pour over rice. Sprinkle with cheese. Bake at 350 degrees for 45 minutes uncovered.

Fruit salad. I always bring something vegetarian. But I like fruit salad because it's something simple in terms of ingredients. I only use fruit...no sweeteners, so I figure it's nice crisp, refreshing, and healthy choice. Because often potlucks can be heavy on desserts, or heavier or less healthy foods.
So a meat or casserole (in which I assume they are expecting there to be a meat) would be tough for me.

This is always a hit when I make it. Cheesy, Garlic Pasta 2 whole heads garlic 6 Tbs. butter 1/2 c. flour 7 c. milk 4 oz. grated Parmesan 3 oz. grated Swiss cheese 1/4 teas. sage 1/4 teas. rosemary 1/2 teas. salt 1/8 teas. pepper 1 lbs. penne, cooked 1 lbs. bulk Italian sausage, browned and drained, optional
Preheat oven to 350. Wrap each garlic head in foil and bake one hour. Cool 10 min. Squeeze cloves to remove pulp. Mash pulp with a fork and set aside. Increase oven temp. to 400. Melt butter in lg. saucepan over med.heat. Add flour and whisk into butter. Gradually add milk and cook until slightly thickened, stirring constantly. Stir in garlic, cheeses and seasonings. Combine pasta, sauce and sausage, if using, in a casserole dish and bake 30 minutes or until thoroughly heated.

How about this really simple crockpot orange chicken? You could partialy pre-cook it Thursday and finish it up Sunday morning: Orange ChickenNote: I usually add a little sesame oil and ginger when I make it.

You didn't say how many people you're feeding or what kind of camping you're doing. Since you mentioned a crockpot, are you going in an RV? Anyhow, I would recommend making pulled pork and freezing it. By the time Sunday comes, it will be thawed. Just reheat and serve with BBQ sauce on buns. I made a triple batch of the following recipe for a party last Wednesday and it was a big hit: Beer Braised BBQ Pork ButtI've discovered that pulled pork sandwich are amazing with pepper jack cheese and a simple coleslaw on top. If you want to have coleslaw on it, bring the shredded cabbage in a big ziplock. Before serving, add the dressing, seal and shake like crazy. That should all be pretty simple for a camping trip.

Thanks for all the great suggestions! I'll come back to this thread next time we have a work potluck, too.
This is kid's summer camp type camping situation. We'll be in a cabin, and there is a dining hall with a kitchen with a walk-in fridge. There will be too much going on to actually cook in the kitchen unless I get up in the middle of the night.
The freezing idea is a good one. I could fix some pulled pork or BBQ chicken tomorrow, freeze it in plastic bags, and put it in the crockpot at breakfast on Sunday. It would be a good temperature by lunch.

Buring Feather's Italian Beef recipe. You can make it ahead of time, freeze it so it stays cold while being transported and stored then re-heat it in the crock pot for serving on Sunday.

My family calls it potato casserole - I think here on this board it is roughly the same thing as/very similar to funeral potatoes. If you need a recipe, just holler!! It's super easy and always disappears!

I always bring small meatballs with garlic mayo dip. They are always a big hit, never leftovers (but that's more of a tapas, not a casserole or complete dish)

If I'm pressed for time, then my quick, go to is from Smart and Final:
Pick up a bag of frozen meatballs a large bottle of sweet and sour sauce
Dump them both in a crock pot, by the time lunch is served the meatballs are soft and saucey and everyone goes nuts over them! They are always a favorite.
I feel like such a cheat but wow, so EASY!
