Tonight I'm thinking about making Giada's chicken meatballs and orchiette. Dh really likes this dish. I'll see where the day takes me.
Don't forget it's tax deadline day. You might want to add chocolate to your menu.

No tax day for me, but I still might add chocolate. Back to kinder this morning, to find we had new wooden toys on the walls - wonderful, colorful and just fun for the kiddos, especially those who had 'backslid' a little having been home with mum for a whole week. Oh, and just to make our day a little more delightful, we had SNOW! In the middle of April! It made the journey in a little treacherous, but it's amazing how long a 2YO can look at snow fall when they are missing momma! Dinner tonight is Day 1 of 'Use up the Easter lamb'. DH bought us just over 1kg of lamb to roast for Sunday, and we still have about 600g left. Tonight I am making Shepherd's Pie, using a bit less than half of the leftovers. I think with all the veggies added, it will still do me 2 meals.

It's Taco Tuesday for us - not terribly exciting but it gets the job done! :-)
Oh, and super stoked about tax day. After two years of owing big, we are getting an $8.00 refund! I swear DH had tears of joy in his eyes. LOL.

I want to brag on DH, friends. He made chili last night and it was delicious, even though he was bemoaning that he wasn't able to cook it over an open fire in a cast iron pot. It apparently is one of his camping recipes and it was missing that open-flame goodness, according to him. I think tonight is hot dogs, another of his camping specialties!

I think tonight will be take & bake pizza. I'm headed out of town early tomorrow and I don't want any leftovers. I'm just headed to my sister's in RI and we're going on a scrappy weekend retreat. May or may not check in. Try not to miss me too much.

Dh is cooking pork, potatoes and veggies. Dd has promised to roast brussel sprouts. We received our state refund check and paid Uncle Sam. Sadly they didn't come close to balancing each other out! lucyg...you'll be so close!! Of course in New England everything is pretty close! Enjoy your time on the east coast!!

I think tonight we are going to have the Gorton's beer battered fish that I threatened to make last week. We will put it on buns with tartar sauce (don't have any lettuce- darn), and I suppose I have to serve a side dish, too, so I will pick something when I get home. Possibly cauliflower or corn for the vegetable.

We've both been hankering for a simple grilled hot dog so that's on the menu for tonight - grilled hot dogs, Spanish rice, and roasted beets. ETA: have a fun weekend, lucyg!

I'm making sloppy joes and roasted parmesan potatoes to go with some leftover side dishes (coleslaw, jello, deviled eggs, etc.) from Easter. Every day is a good day for chocolate! sueg, snow in April is just plain wrong! But I'm glad it was able to distract the little ones. jassy, congrats on the refund!! Try not to spend it all in one place. @nicksmom, it sounds like your dh is doing a great job and letting you rest and heal. lucyg, have a safe trip! I hope you and your sister have a great time!

I thought of you and the other New England peas, but I'll be there for such a short time, I don't think I can squeeze in any visits. I'm actually kind of freaked out about going away. I haven't done anything longer than a three-day weekend in the last two years, and I don't like leaving my (not) baby boy. They'll get him to school late and forget homework and never take a bath. Yes, I know, crazy talk.

Not sure what is on the menu for tonight's food extravaganza, the other half of we is out at a job site all day and I have no idea when the expected finish time might be. So I guess I am on my own for lunch and supper today. I have more left over ham so I am going to go with some sort of ham dish for both meals.......or maybe not. I am sure there are other food items hidden in the house somewhere because my food bill reflects the idea of lots of food....

I'm going to my daughter's this afternoon, she lives 1 1/2 hours away. I'm going to spend the night and she & I are getting up early and going to the Vera Bradley sale in Fort Wayne. My grandkids are making dinner tonight! Grandson(13) is doing blue cheeses burgers on the grill and granddaughter(12) is making the sides!
I'm looking forward to just getting away and spending one on one time with my daughter!

@nicksmom, kudos to your dh. How is your ankle? lucyg, you're only going away for a short trip. Your dgs will be OK. Doubt they're going to split the atom at school during that time. You go and enjoy every minute of your time w/your sister. You're an amazing grandmother, but you need time for yourself to play and enjoy life. Have a great trip.

I'm doing one last beef stew for the season. Cornbread on the side. I just can't do heavier wintery-type meals once it gets warmer. Sometime in the next week or two I have a ham bone that needs using up as well, so that'll cover the last ham and beans of the season also. I doubt there will be another chili night.

Nicksmom, kudos to your dh. How is your ankle? I'm still not able to put weight on it, but I have been able to do some stretching exercises with very little pain. So it's coming along, just slowly. I'm trying to be patient. Save

I cooked a pork sirloin roast for Easter. Apparently sirloin means the same as tenderloin. Even though I cooked it low and slow, it came out quite dry. The little parts that were dark meat were good. I have never successfully cooked pork loin anything, I need a foolproof way that works every time. I am taking the leftovers of said pork and throwing it in the food processor with green onions, pickles and mayo and making a sandwich spread. We'll have that on some bread with lettuce and call it good. "But Mom, where are the green vegetables we should be eating every night?" They're in there. Onions and pickles. Both green. Both vegetable. Tadaaaa!

Happy travels to lucyg. I always worry BEFORE I leave home, but once I'm away and busy I don't worry so much. I hope the same is true for you. Enjoy! I'll make my green smoothie before I head out to tutor. DH can fend for himself. I'm enjoying my evening smoothies (almond milk, plain yogurt, spinach, frozen strawberries or peaches, banana). They are surprisingly filling.

Hello tribe! Just got back from the house that is no longer ours! It recorded about 11:00 so I got the check from the title company and ran to the bank. It really felt surreal ~ DH headed up to the new house while I finished with the movers and final cleaning. The carpet for the new house is in transit from North Carolina so I'm thinking we'll be with DS until the end of the month. I took this picture as the last one of our home for 23 years. I'm making pork chops for dinner.

If you sear it before going in the oven, then drop the bake time to 15 minutes. pork tenderloin

Sometimes we need to go away to be really appreciated. jassy, you made me LOL, but any return is better than writing a check this time of year. @nicksmom, sounds like your ankle is healing nicely. I have no idea what is for dinner and need to get my behind to a store. The kids have been adding to the long list of "mom, we're out of . . .". I usually enjoy grocery shopping and meal planning so I'm not sure what's going on right now, but I don't even feel like eating. If I don't make it to the store, I know there is cheese tortellini in the freezer and Romaine lettuce for a salad, so maybe I can avoid going out for another day. SaveSave

Cadoodlebug- congratulations. I'm surprised they didn't transfer the money electronically. You must be anxious for your new house. It's fun to decorate a different house. We just got a letter from a realtor asking if we'd let a family look at our house. They want this neighborhood. We aren't even for sale. My dh feels like it's a scam. I don't feel like moving. We've redone this entire house except the master bath and some flooring areas. It's a big house though and my youngest will be a senior next year so we could downsize.
Still don't know what I'm making for dinner.

Apparently somehow amongst all the 'nothing' I do, I must do something that gets the boy to school on time.
