I think birukitty is still on vacation, so I thought I'd start one. This is me with my first sushi rolls. My DD taught me, it was easy and fun. If anyone else makes them, what do you like to use? Ours were avacado, cucumber, red pepper, and soy curls seasoned lightly. I'd love other ideas. Post what you've been up to, pics optional. We all benefit from everyone's ideas

I'm not vegan, but sushi rolls caught my eye. We also put green onions, carrot (sticks or shredded) and daikon (Japanese radish) in our sushi rolls. Yours looks great!

The sushi looks delicious! This week, I was eating the last of a batch of vegan baked beans that I had made for a family party. It was so good! I realized that if I made a batch and divvied it up into individual portions to freeze, I'd have a quick protein food for my lunches whenever I wanted.

Being not a fan of raw fish I don't eat sushi. I didn't realize it could be made with just veggies, Duh. That sounds really good. I'll have to try that this sumner.

I am a vegetarian but not vegan. When I visited my brother who is a vegan he took me to a sushi restaurant. I had the best freaking sushi there! Sweet potato tempura sushi roll. It was sweet potato strips fried in a tempura batter with cucumber and avocado all rolled up. Holy crap, it was sooo good!
I couldn't stop thinking about them so I made them at home. Still tasty but not quite the same.

Vegan family here!!
We made sushi handrolls this week also. I did rice, carrots, avocado, cucumber, mango and srirachi mayo (vegan mayo). I've also made them with sweet potato.
Tonight we are having tacos with corn tortillas, hummus, rice, black beans, spinach, avocado and mango pico de galo with some hot sauce on top!! My DS3 isn't great with tacos, so I just put everything separate on a plate for him to eat.

Here is today's dinner: eggplant and onions sautéed in water, on blue corn tortilla, with broccoli slaw and Fabanaise. If you haven't had eggplant as taco filling, you must try it.

Just posted in the dinner thread but I'm not completely vegan but probably 80 per event. Anyways I made minimalist bakers quinoa taco meat and it was delicious! Love her website!

I love baked beans! What do you put in yours? I'm still tweaking my recipe. I like a mix of beans...black, pinto, anasazi, cannelini, kidney. I usually crockpot the beans one day and then add the goodies and bake them the next day. I like onions, tomato sauce, garlic, maple syrup and either a vegan bacon substitute or just a bit of liquid smoke. My whole family likes these, including the grandkids. I often make them for picnic meals so that I have a protein food to eat while they're eating burgers or pulled pork. Save
