Tonight dinner will be chicken stew. We bought fresh stuff for it from the farmers market and I'm always happy to use my instant pot. cadoodlebug , hope you have found a great chiro and that your back is feeling better quickly. What's on your menu? Have a great Thursday(Friday if you're AussieMeg )

It might only be Thursday, but today is Fish day here, because I'm going to England tomorrow. I think DH said we are having chips (fries) with it, and I'll make myself a salad as well. I am nearly packed to go - just the last minute things like toiletries and electronics need to go in last thing tonight or first thing tomorrow. It is only for a long weekend, so not really a lot to worry about. And it's England, so it's not like I can't buy things I forget.

We ended up with pizza last night after the concert. No leftovers, we are pigs. Oink.
Tonight I am thinking tacos. Easy and fast dinner.
Daughter has to finish her Mother's Day project tonight since she goes to her mom's this weekend and she gets picked up from school on Friday. I will take a picture when it's complete!

A group of us have rented a farmhouse for the weekend, and are meeting for a weekend of knitting, chatting and fun! This is the third year the group has done it, and the second time I have attended. We also had a weekend here in Munich last October, and will be going to Norway during the summer.

Tater-tots are a huge hit in my house and I don't serve them often, so I’m making tater-tot casserole in an attempt to atone for my sin of forgetting the egg rolls last night. Oops! Maybe they'll think twice next time about texting me dumb questions while I’m making dinner.

sueg, I hope you have a fabulous time. I would love to have a yarn group to do weekends with. My kids have decided on spaghetti tonight. Not very impressive for our guest, but oh well, at least the kids will eat it. I did shop and get some fresh bread to go with it. I am nervous about my guest and so are my kids. It is my exhusband's brother. He reached out to me on facebook and apologized for the family neglecting my kids. He is in town and he would like the opportunity to try to make it up to my kids. I just don't want them disappointed.

jeremysgirl, dinner is just an aside this evening. Your ex bil has amends to make w/your children. Your ex is your ex, not your children's ex. There's no excuse for his family to have abandoned your children. Tonight the onus is on your ex bil to prove that he is going to be a stable and healthy presence in the lives of your children. May it go well and be healing for all of you.

Last night I only used 1/2 of the package of chicken so, tonight's dinner will also be....CHICKEN!!
I made creamed chicken on biscuits. My daughter calls that part of my "trailer park collection"! Another thing to add to that category is tuna noodle casserole!
When I was a kid my mom made creamed ground beef on toast. My dad fondly called that "sh_t on a shingle"
Do you have any funny food memories?

Would this be shit on a shingle? When I was a kid my mom made this dish: 1 lb ground beef 1 can cream of mushroom soup some milk splash of ketchup splash of mustard Put it on top of toast. We LOVED it. I wonder if my kids would eat it???

Tonight for our dining pleasure we will be having ham sandwiches with provolone cheese delicately heated and smashed with the heavy metal thing that goes on the top of the sandwiches after the first side cooks....LOL! We have a 7th grade spring concert tonight so supper will be quick and easy, and there will probably be snacks when we get home after the concert.....
My dad called creamed dried beef "shit on a shingle". He said it was what they called it in the army, and apparently had it in the army at least once a week....we used to have it growing up once in a while, I guess for old times sakes, I also fed it to my children once in a while. I haven't had it in years now though...the grocery store used to sell sliced dried beef in the sandwich meat department, they do not offer it anymore so one would need to buy a very tiny package and it is expensive and does not taste the same.

Dh has been gone to our cabin for a boys' midweek vacation. Unfortunately, stuff waits to malfunction or break when he is gone. And this time, the garbage disposal leaked last night after running the sink water. It flooded the kitchen floor from the bottom, but I was home sewing and was able to stop using the kitchen faucet.
Clean-up was okay, but I had a sinkful of dishes that I had used to prepare a group meal, and now, those dishes sit in a plastic bin. He comes back Friday night, and Saturday, we have a wedding to attend. I am guessing we'll stop at Home Depot on the way to the wedding and buy another disposal - it's not the first time it has leaked.
So, tonight is going-out-to-eat night for me. I am thinking ribs and baked beans. And banana pudding. Yep.
Thanks for the thread. I am off to take a friend to see her mom in the nursing home. Life is good.

I'm trying a new recipe tonight - Chicken Bog. It's basically and chicken and rice dish with carrots, onions, seasonings, chicken broth, etc. Sounds right up my alley - easy and quick.

Tonight is spaghetti and meat sauce (4 cheese) and I can't wait to eat it. I make it fairly often, but I love it and so does DS. My dad is eating at Men's Night with his golf friends so he won't be joining us.
I need to make a salad and we all can't agree on the same kind of lettuce we like. I have to get a butter lettuce in I think as it's my favourite.

What a fun knitting group sueg! Good luck with your exBIL jeremysgirl. DH's brother was/is a lousy dad to his girls but DH and his sister worked hard to stay in their lives. The really sad thing to me is they both feel one of them will end up taking their dad in when MIL dies and support him in a way that he never supported them. We are fending for ourselves tonight. DS was thrilled when he saw how much fish was leftover for a second night of fish tacos (only two of us ended up eating last night).

I made crockpot chicken parmesan last night, so we will have leftovers from that. Here's a handy tip: when the crockpot recipe says put the pasta in 30 minutes before serving, don't believe it. It was right on the edge of super mushy. It was edible, but would have been quite good if I had put in the pasta only 15 minutes before serving.
