DH is on dinner duty tonight and I believe we are having pesto chicken with caprese salad.
It is a lovely day here today - a wonderful way to kick off a long weekend. We went out for a long bike ride in the Englischergarten this afternoon - so many people in the park! Now DH is making us Aperol Spritzers for pre-dinner drinks!

Not sure what's on the menu for tonight. I see a trip to Raley's in the near future. Enjoy your weekend, everyone!

I have to take ds to pick up his car at a repair place- apparently the raccoons he hit two weeks ago did some actual damage and the car was making noise yesterday, so he took it in. Anyway, there is a Honey baked Ham store at that intersection, so if I can fight through the massive construction project at that same intersection, I will pick up a quarter ham and try out a Mac and cheese recipe that I think would be simple enough for ds to make at school.

I am making fried grouper. There is a fresh fish guy, it's locally sourced and caught on Thursday, so I have to make it tonight for freshness. We'll have cabbage and squash with it.
Weekend weather looks super warm and friendly so we are off to have some fun in the park.
Thanks for the thread and that meme. I only use frozen kale in my soups that get smooshed up with my immersion blender. It has an after taste or mouth feel that bothers me, for some reason.

It's movie afternoon for us, so we will be eating restaurant fare tonight. So hard to find something low carb besides a salad. I'm so sick of salad. Ok, I could have grilled chicken and a salad. Big whoop. I had that yesterday. (How do I get the cute smilies you all use?)

I asked dh to take me out tonight. I'm craving fried seafood but it's really not low carb...not sure if that's where we'll end up or not. I tend to cut myself some slack with my diet on the weekends but I've been doing really well with the low carb this week so I'm not sure I want to go off plan. Fried clams may win...so indecisive!!!

I haven't decided yet. It is an awfully lazy afternoon around here...it is getting very cloudy and I suspect it will rain very soon. I just woke up from a nap and I am starving, but can't seem to drag my ass into the kitchen. I might make a nice salad, but I also might make mac and cheese and baked chicken. Or maybe a bbq pizza (thanks to the pizza thread.) For now, the lazy is too strong to get up. It's too bad that the only delivery around these parts is iffy pizza and jimmy johns. Delivery was made for people like me on days like this.

It's take-out night. Thank goodness!!
The meme is funny! As far as I know, no one in my family has ever had kale. I've never purchased it and it's unlikely that I ever will.

Tonight I'll be trying the Addictive Chicken for the first time. It's always with some trepidation that I try new chicken recipes. To be honest, I just don't do well with chicken. It always comes out too dry. For this reason, a good rotisserie chicken is always a better bet at our house. So having said that, here's hoping I do better tonight.
It's been a lovely lazy day for us. I did go into my craft room for the first time in a long time and made some cards. It's nice to have the time to be creative once again.
Post dinner update: Very good! The chicken was very moist and well recieved (DH has two pieces). I'll go lighter on the paprika next time, but it was a new recipe success.

Dh is going golfing with his dad and brother later this afternoon. I'm probably going to take the boys to the beach.
With that said.. something easy. Probably spaghetti with meatballs, garlic rolls and salad.

That meme did make me LOL, leannec , but I am a fan of lightly sauteed kale and the secret to a great kale salad is to massage the kale. Seriously, it goes from bitter and stiff to tasty in 5 or so minutes. You see the leaves soften and the color brighten before your eyes. You must massage kale!DH is still off catching tuna for me to fill the freezer, so I'm being lazy. Not quite as lazy as last night with Panda Express. I came home from Costco with a chicken fettucine Alfredo ready to heat and serve with Caesar salad. I don't make Alfredo sauce because the cream doesn't sit well with me anymore so the kids were thrilled to find it when they unloaded the car. I also brought home a rotisserie chicken so I will have a little of that with the salad.

Chicken Alfredo here too, (we make our own sauce).. and we like to add bacon to it with garlic rolls! It's the time of year where it's too hot to use the stove..

How exactly do you massage kale?
DD and I went to a barn sale today then stopped at our favorite restaurant. We shared margherita pizza for lunch. DH has been at the Memorial golf tournament for the last 2 days. He brought chicken salads home. So no cooking. Yay!

He who has the best physique in the family is worried he isn't getting any exercise right now (eye surgery) so he doesn't want to put on any weight and wants to eat very healthily. This means he wants 3 different vegetables for dinner tonight and the leftover butter chicken. (Not sure how calorie wise butter chicken is. Probably not very...)
I am having spaghetti bolognese and I plan to enjoy it.
Dad is going out for dinner tonight.

We will be having the roast lamb and vegies that we didn't have last night. We were painting and sanding and plastering most of the day and time got away from me. Then I had to go and pick up DS from the local shopping centre at 5:30 and somehow I ended up bringing 3 of his friends back as well. We ended up having chicken and chips from the takeaway shop.

Graduation was very nice. My kids are now men and I'm in shock at how quickly it flew by. This am we did a graduation brunch for ds and his gf. Sil took my mil and mil's sister back home. Then I went to the back and slept all afternoon. DH had the leftovers from his huge breakfast, oldest ds warmed up leftover pizza and youngest ds is passed out on the sofa. His best friend flew up for the ceremony. So, I would imagine that the friend group will end up having a later dinner out somewhere that burgers and fries live.
Hope you had a fantastic Saturday.

We had ham and Swiss paninis. We have two confirmations tomorrow so we have two from 500 miles away coming for two nights. I sort of cleaned the house but actually cleaned the bedroom and the two beds well.
Happy SaturdayEverybody!

How exactly do you massage kale? First, put on some Barry White and pour the kale a big glass of wine.

OMG. It's not enough that we must eat kale. Now we have to massage it, too?! bc2caGlad you made it to both graduation and brunch, scrapmaven. My sister and I were way up in the North Bay today, so we stopped at the Amy's drive-thru in Rohnert Park. I think I posted about it a couple of years ago when it first opened. It's from the Amy's organic frozen food people and they opened this fast-food vegetarian/vegan place. All the packaging is compostable. They have a garden growing on the roof. The place screams "hippie" and maybe a little tiny bit "smug." But we had a nice lunch there. Good fries and chocolate shake. So I came home and just finished off the little bit of BBQ beans and potato salad leftover from last night. And now I think I'm going to get into the booze. Nighty-night!

scrapmaven - The tribe honors the great Trixie Bender , Ambassador of Vegetables, who commands that you rest your hindquarters in the recliner. Do so, please. And lucyg , I know what you mean about hippie and smug as I am also a child of the 60's. That said, a good French fry dipped into a chocolate shake can be as smug as it wants - a tasty food no matter what the attitude. So that no one gets the wrong idea about my intentions, I do not massage my frozen kale before I throw it into the pot of soup. I feel like the immersion blender takes care of any and all hands-on labor.
