After last night's risotto fiasco where I made the dish and then when it came out looking like soup, I was reminded that putting in the rice is essential to a good risotto. DOH! Dh was a good sport. Tonight I'm going to make risotto with the arborio rice included. I'm fighting w/my tube site and the antibiotics are knocking me out a bit. So, I think I'll blame that! Ya, that's it. What's on your menu? Have a great Tuesday.

scrapmaven sorry you are still having tube issues. Dinner is a mystery tonight. DH's stepdad's uncle passed away, so we have to make a trip to the funeral home - during rush hour with every other road under construction. We have to be out of there by 7 (before the rosary), so I'm guessing we will just pick something up on the way home.

littlemama , I'm sorry to hear about your loss. May his memory be for a blessing. My tube issues are normal. When you have a device that didn't get there due to nature it acts up now and then.

I am hungry for tacos. So I looked online and found a recipe for taco seasoning which I will make and leave out the salt. I also have lean ground beef and good hard cheese to top it along with the lettuce, tomato, mushroom, black olives, onions, peppers, and whatever else I can find to top it off with....this will be eaten by me without the crunched up doritoes. I will see if it will satisfy my hunger for tacos without going off the dash diet bandwagon. LOL! Looking at that it will basically be a chief salad with taco flavored meat and melted cheese....... scrapmaven I hope your tube woes are soon resolved. littlemama I am sorry for your loss.

scrapmaven - Sorry you're still having issues with your tube. I hope you get some relief from it soon! littlemama - I am so sorry. Your family is in my prayers. Still trying to clean out the fridge a bit before we leave town on Thursday. I'm thinking sausage and pepper breakfast burritos are on the menu.

scrapmaven, you have the greatest sense of humor! I love that you can laugh at yourself amidst of the struggles of your tube. Not sure about dinner here, either. We will be doing some yard work after work, so maybe something like cousins. Then I have to do dishes. Not much, but I neglected them for 2 days now. LOL We have a window guy coming tomorrow at 5, so I need the kitchen clean tonight.

I ended up getting a rotisserie chicken at Raley's yesterday so we had Chicken Rice Aroni last night and will have Chinese Chicken Salad tonight. DS texted me this morning that it was 85 degrees there but then texted me again and said he forgot to refresh. In the 90's. We're at 93 right now. Headed to 111 by Thursday. I'm melting.

Healing wishes for you JoP Thank you leannec - you may be aware that it's very warm here 😎, well for the UK and I have to sleep in long cycling shorts and a sports bra for a week 😠, plus I'm only allowed to wash and not shower for 7 days, but I'm pleased it was done early and I was allowed come home the same day and not be in overnight 👍🏻😁 Sorry for the moan dinner tribe

lol scrapmaven! We've all done it - I made a chicken and rice dish once... minus the chicken! Hope your risotto turns out good tonight and your tube issues get resolved. I love your attitude! We're having ham steak, red beans and rice, and applesauce tonight. Probably should throw something green in there but I dunno...

JoP, Extreme heat is no way to heal from a nasty surgery. After all that you've endured I pray that you have a healthy and joyous life from this moment forward. Rest well and let others do the cooking for you.

The tribe honors those with medical issues or heat-related blahs. We celebrate your living and loving bones and muscles and arteries and veins and such things as thermostats. We do not mind a moan or two.
That said, we have just enough enchiladas left over to combine with refried beans, more and more cheese, and some new whole grain tortilla chips to mop up the sauce. And a huge fruit salad with mango, peaches, raspberries, and the last of the decent strawberries. Dh will want whipped cream.
Thanks for the thread. May you continue with your role-model attitude, oh great one!

I can never hope to achieve desertgirl 's level of eloquence (not even in my native language), I bow to you, our dinner scribe. scrapmaven : I hope you have some relief soon. littlemama : I'm so sorry for your loss @pascopea : sending healing vibes your way It has been a wonderful 22-23 C here today, so I have spent a couple of hours working on my garden today. Rhubarb has been cut (and sold to a local company that makes jams and other yummy things from the local gardens. They have been in business for almost a century, and I can't wait for this year's applejuice to be ready (my absolute favourite)), flower beds have been weeded (I don't want DS to do that when we're in NYC) and my raspberries have been inspected. I'm glad to say that so far it looks like my raspberries will be bountiful. Aaaaand.....I didn't have to make dinner! We celebrated one of my nephews today, so my sister made lasagna. I baked a Snickers cake, but I much prefer baking to cooking.

Thank you all, but seriously, I've only met this guy once or twice! DH probably not much more than that. In fact, MIL said we did not need to go to the funeral home as no one we knew would be there when we were. I highly suspect that BIL and his family were not going to go, and MIL likes to avoid anything that makes that Cluster of a family look bad. As of Sunday, she knew we were planning on going, so no reason for things to suddenly change today.

Sometimes you just have to show up as a sign of support ... if they don't want you there then feel OK with that ... A friend of ours has her dad in hospice right now ... I've never met him but I'll go to his funeral for her

So, since I had not planned to cook dinner and now I need to, I told dh, based on my memory of what we had at home that didn't need to be thawed, that I would make him some jambalaya (Zatarans, so don't be too impressed). When I arrived home, I found that my recollection of having the jambalaya mix was correct; however, the smoked sausage that I kept seeing in the fridge was expired. And not like a day or two expired- seriously expired! Sooooooo, plan Z is the meatballs that we made and froze memorial day weekend with some jarred sauce and some pasta. Me? I had ice cream at work.

scrapmaven I hope your doing better soon JoP I hope you heal fast and don't have too many heat issues I'm grilling chicken thighs & serving with pasta and veggies. Tomorrow I'll have my last HS graduate so not sure if we are going to lunch or dinner. I thought we'd go to dinner but not so sure now as graduation is during the day and DH doesn't want to deal until dinner with guests. Then again by the time we get out of graduation and guests make up mind it might BE (early ) dinner who knows. But either way - yay! I'm done I now have all grown ups! lol

DD just left (she visited here for a couple of days after a two-week work trip, but was eager to get home to her boyfriend) and took half my fridge/freezer/pantry with her. What can I say? Feeding people is MY love language. Anyway, I will probably just make a tuna sandwich. It's too hot to cook and I'm tired of eating out. Well wishes to everyone who's sick, recovering, bereaved, overheated, etc.

It's a rainy night in Georgia, but the storms have dropped the temperature by 15 degrees! I had a bowl of Cherrios and DH is having spaghetti and garlic bread. Alas, not a veggie in sight this evening. scrapmaven when DH was ill, it was known in our house as "that damn tube" We even had our GI doctor calling it the damn tube.
