What are your tips of keeping a travel journal while on vacation/traveling? I would like something simple that includes some memorabilia and art work but needs to be simple especially since I will traveling with a group.

I like to use a 7x9" binder like BB "misc me" or the SS "sn@p" books for my travel albums. They come with blank pages and dividers, and each has lots of options for additional elements, including photo sleeves and dividers with or without pockets.
Before the trip, I pull out the pages and may even cut and punch holes for rings in additional papers so I have enough for at least one page per day of the trip, (the binders are too bulky to take along), clip the pages together and put into a ziplock bag along with a couple of journaling pens, a glue stick, another bag for collecting ephemera and a few travel stickers. I put that ziplock into my carry on.
I take a few minutes every day to journal about it: usually at the end of the day in the hotel room, but sometimes waiting at airports, or maybe sitting on the plane. If I have something from the day (like a boarding pass or a ticket, maybe a postcard) I might glue it right onto the journaling page, or I might tuck it into the extra bag to be put in a photo sleeve or a pocket later.
When I get home, I just need to print the photos, tuck them into the photo sleeves between my journaling pages, and I am done!
Have fun on your trip!
