I grew up about smack dab between those places so I a familiar but not an expert on those areas.
However I keep hearing from people who are that St. Francisville is an up and coming area. Natchez is a great place to visit but there isn't a lot to do there outside of the historic area. I drove through there to get to college and it is in the middle of a bunch small towns with not a lot to do either (and tons of speed traps). There isn't a lot in St. Francisville either but you are close to quite a few larger cities/towns and have better access to interstates.

www.nps.gov/natt/index.htmWe visited Natchez when we drove the parkway. It is a beautiful old southern town on the Mississippi river. We stayed in a charming historic hotel downtown. Loved the parkway

Growing up in Natchez was the best. It is a beautiful town with a lot of history. Many of the confederate mansions still stand because they basically welcomed the Northern soldiers, thus protecting their homes. When I was in elementary school, during the Spring Pilgrimage each year, I got to dress up in antebellum dresses, perform in the big pageant, and give tours of some of the most beautiful houses. It is an hour from Vicksburg, two hours from Jackson, and three hours from New Orleans. It has a feeling closer to New Orleans than rural Mississippi. However, I visited a few years ago, and it was run down in a lot of areas. There also wasn't much of a night life - I probably wouldn't have liked it if I had lived there in my teen years! There is a casino in Natchez now, so that will bring in performances and there will always be something entertaining to do.
I haven't been to St. Frances that I remember, but on a map, they are practically on top of each other with Vidalia in the middle. Vidalia and Natchez are so close that I had classmates who lived in Vidalia. I would let housing be the deciding factor between the two. There is only 3 miles separating the town centers of St. Frances and Natchez, per Google Maps, though with the Mississippi River in between, it will take longer to move between them.
Natchez will be the larger of the two towns, and I suspect you'll find lower taxes and more to do on the Mississippi side of the river.

Thank you Mommy. We are in the very beginning stages of all this transition stuff. The area sounds a lot like where we live now, except no beaches. However, we may consider buying a second home on the gulf for vacations and eventual total retirement. Even if one of these jobs don't work out, we may need to go visit the area. I will keep you posted!
