I was thinking of searching aliexpress or if there's some that you can cut out a smaller circle shape. I'm not sure on the size though. Here's what I'm looking for

A couple of years ago I bought some mini ones made by Martha Stewart at Michael's. I am not sure if they still carry them.

I don't know. I saw them on Pinterest and it goes to a photo. They seem versatile for layering embellishments.

Those were the older Martha Stewart ones. I think they may still carry them at Micheal's.

I recently bought a couple dies to make my own, so it might be something you can do if you don't find the ones you're looking for.

Those were the older Martha Stewart ones. I think they may still carry them at Micheal's. there are no Martha papercraft items at Michael's anymore. There was also a 4x4 quickutz/Lifestyle Crafts doily die, DRO316 that had 3 doilies 1 1/2" to 2". You may be able to find on ebay. I saw one earlier today a scrap sale. (try www.ebay.com/sch/sis.html?_nkw=Quickutz+4+Scallop+Doilies+doily+die+dr0316+cuttlebug+sizzix+nesting) Christine Middleton did a great series on decorating dies several years ago.

Did you check Etsy? I'm pretty sure I saw 2.5" doilies there, but as I recall the seller was in Australia.
