We probably have close to 2 bushels of peaches from our small tree! We learned too late we should have pruned it in the spring. It didn't produce as much last year. It was leaning bad! I am planning on some freezer jam, a peach pie, and peach ice cream. We have the ingredients for the ice cream. Also we already have a bunch of frozen peaches we need to use. If you have great recipes for pie, cobbler, or crisp that would be awesome! Or add other peach recipes you love.

My okaasan (mother in Japan) made me peach drinks with white peach and cream. It sounds crazy but she would knock on the bath door (which was more like a spa than a bathroom) and bring my a peach drink while I took a bath. (Bathing is a ritual in Japan at night...) Blend the peach with a bit of cream. It's quite divine!

I made peach crisp the other day that turned out great, in spite of the peaches not being as ripe as they should have been. I used 10 large peaches, peeled and sliced. Put them in a pan with 3/4 cup hot water, 1/4 cup sugar and some cinnamon and nutmeg. I added a tablespoon of cornstarch dissolved in a little water to thicken the juices. I simmered for about 20 minutes then put them in a 13 x 9 baking dish. The topping was 2 cups oatmeal, 1 cup flour, 1 cup brown sugar, 2 tsp cinnamon, 1 cup butter and I added more nutmeg. Just crumble the topping ingredients together cutting the butter into little bits. Bake at 375 for 35 minutes. It was delicious warm with vanilla ice cream.

I'm jealous. We have 4 peach trees and didn't get any peaches this year. We got a lot last year though. We think the late frost got them. I think I'm going to have to go down the fruit highway tomorrow and get some. The ones in the grocery stores are like rocks.
We do have a lot of apples, pears, and plums though. I don't want the plums.

I don't want the plums. I don't know when is the right time to pick plums. They were a bit on the hard side when I picked them but they came right off the tree. I have a hybrid plum/nectarine tree and it is mostly all plums. I LOVE plum jam and I have enough for four batches. If one batch works out, I'll do more. I'm going to send you a peamail about a grocery store that has awesome produce from local farmers. That's where we get our corn. I know the farmers that they purchase from. I want to plant some more fruit trees. I just have two.

Today I might be tempted to try them with another flavor like a little ginger or maybe basil?
