I have to share this recipe because it was freaking amazing. I made it last night- and everyone loved it. I will admit I was quite skeptical. Vegan Lasagne
My changes were that my veggies included some onion and red & yellow pepper to go with zucchini, spinach and mushroom. I didn't use any oil- and I did use her specific brand of hummus- wow. It was SO good. A side salad I decided to throw in was this one because I wanted something sweet with nuts. I cut down portions to make one bag of store bought slaw and I omitted oil. Yum! Shamefully, we followed with some vegan brownies and they did include oil but so moist and SO good. Please share your latest discoveries!

Thank you for sharing. I will definitely try those recipes. Pinned for later These Jackfruit Gyros ended up being my sons new favorite meal. He asks for them constantely. And these Tex Mex Burgers impressed my meat eating friends at a dinner party.

I'm here, just saw your tag. I was having daily migraines for the past 2 1/2 months due to the almost daily thunderstorms we were having here in Annapolis. Once they left I was in "cycle mode" and luckily a new doctor I saw for my migraines just recently prescribed a medication to get me out of this cycle. Once it starts those migraines continue and it's really hard to stop them. Anyway, the new medication worked and this past Tuesday was the first day I was migraine free. That's why I haven't been posting the thread. I feel so much better now.
I feel well enough now to continue. So from now on beginning Monday, Oct 2 I will once again post a weekly vegan thread. I'm so sorry to leave you all hanging.

I have to admit I've been feeling a little low myself lately. Turns out I've gained 5 pounds and I was so depressed over it. I couldn't figure out what I was doing wrong (and while 5 pounds doesn't seem like a whole lot to me I could feel it on my body and my clothes were fitting tighter). Well for the past few days I've been eating more and the weight has been dropping again. Turns out I wasn't eating enough! Now I'm only 2 pounds from where I was and feeling a lot better. Oh, I was also skipping my thyroid pill off and on some mornings. A huge mistake!
For those of you just beginning know that this method (whole foods, plant based) does work for weight loss. It does take time, but they say that weight lost slowly is weight that will stay lost. For me I began this journey for my health, but very soon it became about the animals and about the environment. It's been 3 1/2 years for me and I only wish I'd done it sooner.
