Tomorrow it all begins for another year... School plus swim team, hockey, dance, martial arts, etc...
Just wondering what your go-to meals and snacks are if you are running around at night like we are? Some nights we will have time for a quick dinner before heading out. Other nights we won't be home til after 7 pm so I'll want something fast to put together when we are all famished.
I'm not opposed to some crockpot meals, but my kids can be picky about foods that are 'mixed' so I don't want to do that night after night.
What are your go-to meals on crazy nights?

This might not work for since they would be 'mixed' but soup is is so easy to heat up for a snack or late meal. I make home made soups and add extra veggies - creamy chicken vegetable soup or taco soup.

We have many high quality lunch bags with ice packs so I can pack the kids good after school snacks that stay cool all day.
After school and before 3 hrs of dance, dd will eat a half bagel with cream cheese or she likes rice cakes with sliced cheese and an apple. She'll take pretzels or something like that with her by they don't have much time to snack.
When we get home at 7 and I want dinner on the table right away, my go to is quesadillas.
I make a large batch of the no fry refried beans (allrecipes) in my crock pot and freeze the refried beans in small amounts. My kids like this with pinto beans or Black beans.
Then, when I get home I heat a skillet, spread the beans and shredded cheese, add some diced olives and crisp the quesadilla. My girls will eat that with green salad. I keep washed lettuce, chopped veg and homemade dressing in my fridge, so I throw a salad together quickly. If I have time, I pan-fry some chopped veg for in the quesadilla, or maybe open a tin of artichokes and add some feta.
If in a major rush, I wrap everything in the tortilla and heat it in the microwave for a burrito. Kids will eat it either way.
I can wrap other things in a tortilla too, like tuna and cheese or a bunch of veggies with avocado and cheese (we don't eat much meat) and heat in the micro.
My kids like lentil tacos. I make the lentils in 5 min the night before or the day of and I warm them in the micro, we add lettuce, cheese and tomatoes to the shells as well.
My kids like: Salad bar (I put out green salad and have the fixings ready - they like chick peas, tuna salad, chopped veg, nuts, marinated lentils, couscous) Pasta (I've precooked it so I just heat it up in some warm water or the micro) Scrambled eggs
I often add steamed edamame to my meals if I'm looking for extra green and protein.

FOR dinner, anything made with hamburger. Spaghetti, tacos, burritos, hamburgers, hell hamburger helper every now and then
Crockpot, something to make sandwiches out of
Ds always has a granola or protein bar with him

Back in the soccer until late years (and there were many of those) I would make whatever dinner I wanted and plop in the crock pot on warm so that it would be all ready to go when got home-that way I wouldn't be tied to only crock pot meals. If I needed pasta or rice as a side, I would start it as soon as we walked in the door and it would be ready by the time everyone got settled.
It worked well for us, and saved me from having the same meals over and over again.

Quesadillas are my go-to, too!
I never thought about cooking 'regular' food and keeping it warm in a crockpot. Good tip!

You could also double your recipes when you do have time to cook and freeze the extras to reheat on the busier nights.

We have football practice and swim team for both my kids right now. Last year at this time I burnt us out of sandwiches and crockpot soups.
This year I've done breakfast for dinner a few times. And it was a hit with the kids. Today we ate open faced, or as my dh calls them, lazy man's omelette.
Tomorrow, pancakes and sausage with a fruit cup.
I'm trying.
