My DD is in college and I often cook things for her and freeze them in small quantities so that she can have dinner ready quickly every now and then (taco meat, chicken, meatloaf...) She really likes the chicken pie from Costco so I was wondering if I cooked it, sliced it and froze it, would it still be good?
What do you think?

You will want to partially freeze it before slicing so the pie interior holds together until she thaws/reheats it. Some types of dessert pies are less freeze-able. One tip, is look to see if the thing you want to freeze already exists in a frozen state in the grocery store.

My grandmother used to freeze slices of pecan pie. We would eat it frozen or just partially thawed and it was delicious. I don’t see why you couldn’t freeze other types too

We have frozen the chicken pot pie but usually cut it up straight from the store. I imagine if you cook it first, it would be fine..probably just as good!

Yes, I think it would freeze well. I know pie crust freezes well and you can thaw it later to make a pie shell.
Since I've never bought one (dairy allergy), is the filling thick enough to stay put on it's own? If not, I wonder if it would work if you built a dam of foil around the slice? I might try freezing one slice uncooked and one slice cooked. I think it would work to cook it first, but I think the crust would be flakier if it was frozen uncooked and then cooked. Sometimes I buy the family Marie Callander's pot pies and they are not precooked. (But obviously hold their shape, as they are individual pies vs. slices.)

I woukd make them in Mason jars, put the kids on and freeze and then just bake when she is ready.
Instructions should be on pinterest. My boys love them that way!

I used to make individual meat pies, cook them, then freeze them. That might be a better option.

Yes and I say that because our family friend buys oodles of Costco pumpkin pies in the fall and eats a piece each night all year long. He must buy 20 of them to last that long but he likes his pumpkin pie!

I would bake the chicken pie first, chill, then cut it into individual servings. There is no way one slice could be baked without it falling apart and there is no way the crust would taste good just microwaved. The costco filling is pretty thick, not runny so reheating one piece in microwave works fine. Do you have any of the Costco cabinet wax? We buy that to cover stuff in the microwave so I would place an individual slice of semi frozen (or at least cold) chicken pie on a piece of cabinet wax (or maybe freezer paper), freeze so it stays together, then wrap it tightly, wrap again in foil and freeze. When she takes it out she can put the piece on a plate in the microwave still in the cabinet wax or she could slide it onto a plate while it was still frozen then microwave. The cabinet wax paper is a little slick, but not waxy like regular wax paper.

I must say that if I were your daughter I would be thrilled to find a frozen, ready to nuke and eat "piece of" chicken pot pie in my freezer... even if it doesn't hold its shape and is totally smushed together. I wouldn't care. yum!
