I'm co-producing a fun event, a fundraiser for a fab non-profit, tomorrow night. We are having a complimentary wine/cheese reception at 6:30, will stop serving at 7:15 when we open doors to the venue, with show due to start promptly at 7:30. Have presold all tix (as of three weeks ago, which was my goal!) and expecting 135 guests on the outdoor patio for our reception, if everyone comes. I'm guessing that at least 100 will. Space is a bit tight, so I'm having 4 identical food stations, all marked with a bunch of balloons attached to donation jar. (All food and wine are being donated, and $ in the donation jars will also be donated to the non-profit.)
Anyway, I'm going to serve 4 - 5 cheese on a large tray, with some grapes and dried apricots and cherries. Leaving out nuts in case of allergy for some of the guests. I'll have a smaller platter on each table with a jar of tapenade in the center and assorted crackers surrounding it, and GF crackers in another container on the other side of the cheeses. I'll have ind. wrapped chocolates on the tables too
My question is this. I bought three 2 lb. blocks of cheese. How soon before the event would you be comfortable slicing or cubing it, and how would you store it before plating? (The other cheeses will be triangles of brie with knives for people to help themselves.)

you could do it that morning. put on trays, wrap with glad cling wrap and put in fridge..

you could do it that morning. put on trays, wrap with glad cling wrap and put in fridge.. I won't be assembling the trays until 5 pm on site, but hoped to cube or slice the cheese by noon or so and thought I'd put it in ziploc bags. do you think that would work?

I've cut up the cheeses the day before an event with good luck. Yes, zip bags will work. Or just put them on plates and saran wrap them. As long as they are sealed, they should be just fine. I'd package each cheese as you cut, then put it back in the fridge. It will dry out if you leave it out as you cut up everything.
I think your food sounds great! One thing you may want to check is nuts in the crackers, and label them nut free as well if it applies. They put nuts into everything and if I took precautions for my nut allergy guests, I would want them to know it. I also usually keep a box tucked away if they want to look at the ingredients.

I'm going to leave wedges of brie and blue cheese with knives in them and will have some extra cheese in the fridge as back up. Event only lasts 50 minutes before seating for the show, which is the main attraction. Thanks for asking, though, I appreciate it.

She'll be keeping an eye on quantities and will put out more cheese and crackers if needed. It is so hard to know how many people will come to the pre-show reception and how much they will eat... I'm Polish and running out of food is not an option!

I swear, after 27 years as an Air Force wife, 6 years of football snacks/meals (4 as team mom) and 6 years of theatre tech week meals, I could feed any group with 48 hours notice! I seldom have much help when I'm at home, so 90% of what I feed people needs to be able to be prepped ahead of time. If you do another event like this, Ina Garten is great for cocktail party tips and advice. She's the one who advocates so much to have your prep done ahead so that you can enjoy the event, too.
