We ended up having clam chowder for dinner last night. I need to go to Raley's because our refrigerator is getting bare. I mourn the end of fruit salads as our wonderful summer fruit is swindling down. I wonder how long before I stop thinking a deer is going to jump out in front of me. <shudder>

I’m making baked southwestern egg rolls with avocado, lime, ranch and cilantro dipping sauce. Earlier I used leftover chicken and made a pot of soup. Dh and I just had some for lunch...it was delicious!

It's just DS and I for dinner tonight. He wants swedish meatballs. So that's what I am going to make. KelleeM your Apple pie yesterday looked delicious. I could totally have gone for a piece of that warm with vanilla ice cream. cadoodlebug, I grew up in the country I consider myself lucky I never hit a deer. It's almost like a rite of passage when you grow up in the sticks.

cadoodlebug, take it very easy on yourself. You had a bit of a shock and I'm sure you're a bit rattled. Wish I could make you some soothing tea and give you a hug. We have leftover Tuscan Bean Stew that has barely been touched. I think I'll offer a choice of that or PW's chicken nuggets and french fries.

We have some paella leftover so I am going to make more but make it differently tonight. I am going to use tomato paste with the water I used to boil the rice, I will get some more mussels as they were very popular, more prawns and I have another chorizo in the fridge. I bought peas to put in it and well that kind of escaped me. I should have taken them out when I was getting out the ingredients. I couldn't get short grained rice anywhere so I got "Italian style rice" whatever that means. It looked short so I bought it, but I am not sure what it was. It took longer to boil than I had anticipated. I will give it a lot more time tonight I think. DS didn't mind it at all and he really loved the flavour. I used quite a bit of saffron and smoked paprika and he thought that was awesome. Ok. I will do that again.
Happy Sunday, everyone!!!

Beautiful day, but windy and chilly. Definitely not summer anymore. DD and I went horseback riding today, and since I know Castellany (my loan pony, but since he is smaller than the Fjord Horse Mikke, I usually let her use C.) gets a bit energetic (<--- understatement ) in that kind of weather, I decided I should choose Castellany. And I'm glad I did. He spooked at everything, he tried to run off with me in trot and in canter he decided to do his hot air balloon imitation and buck like crazy! He is 22, but decided to act like a silly 5 yo. And DD laughed so hard that she almost fell off Mikke. Hopefully he will behave tomorrow. Dinner? Roast, hasselback potatoes, vegetables and gravy. Raspberries and whipped cream for dessert.

I made another pot of soup today. A cold front blew in last night and it's a brisk 38 degrees today. BRRRR. I'll make some grilled cheese sandwiches to go with the soup. We are cozy and happy today.

Tonight we will have a lasagna type pasta bake (using rigatoni pasta rather than lasagna noodles) and salad. I also made some broccoli potato cheese soup to use as lunch for the week. I had some for breakfast today

I ended up making chicken vindaloo last night and have enough leftover for tonight. DH asked me to make spanakopita to take in to work tomorrow for his partner's birthday, so I have the first trays in the oven right now. I'll make a few extra to supplement our dinner.
DH & DS did drive to Julian for breakfast this morning (our apple growing/picking area) and came back with a Mom's apple pie that we'll have for dessert.

We have a birthday party this afternoon at the bowling alley. It's for one of my favorite 5yo girls ❤
We plan spaghetti and green salad for dinner.
I have a doctor's appointment tomorrow morning and if you can think of me and pray, I'd truly appreciate it. I don't know what is the matter and the unknown is making me fearful. I pray that it something minor and not serious.

It got cold fast here yesterday. Last night we had shredded chicken sandwiches for trick or treat, our heat stopped working today so we're going out for wings and then going to bed to snuggle up and watch movies.

I haven’t had homemade Swedish meatballs since my Gramma passed 16 years ago. I found a recipe online last week and I really thought all the kids, even picky DS would like it. I didn't get a chance to make it when all the kids we're here. Next time I'm making it for a full family night. I really truly hate to cook. It just drives me nuts when I put in a lot of effort and then get told my meal is gross. Picky kids can cook for themselves. But at least I have lunch for tomorrow.

Pork chops with mushrooms and gravy, butternut squash fries and roasted brussels tossedwith dried cranberries and goat cheese crumbles. Did you cook the brussel sprouts with the cranberries and goat cheese on them? Or did you toss after they were done cooking? Brussels sprouts are not one of my favorites so I'm always looking for ways to do them that dress them up a bit.

For our dining pleasure this evening we will be enjoying fried rice with pork. We had chicken enchiladas with garlic rice and green salads for family lunch at noon. It was our oldest grandson's 18 birthday dinner......."sad"........where does the time go? We also had root beer floats which were a big hit......LOL
Happy Sunday Everybody!

Brussels sprouts are not one of my favorites so I'm always looking for ways to do them that dress them up a bit. I haven’t started cooking it yet, but I’ll cook the brussels on their own and toss with the dried crabberries and goat cheese after. I’ll probably also drizzle some balsamic glaze on them.

Someone posted a recipe for slow cooker beef stroganoff last week but I forget who. Sorry! That’s what I’m making tonight, anyway. Of course I have tweaked the recipe 18 different ways. :eye roll: But it looks like it’s going to be delish. Plus egg noodles and some kind of veggies, probably zucchini since I bought a ton of it. cadoodlebug, apparent I missed some deer excitement. My DD hit one once on 101 up in Redwood National Forest, and she was damn near hysterical afterwards even though it wandered off on its own. newlywoods03, positive thoughts to you. Please keep us posted.

I had some more KFC Mashies on the way home from the beach house, so I wasn't very hungry come dinner time. I ended up having some leftover spag bol at about 8pm. I'm thinking of you newlywoods03, and I hope your appointment goes well.
