I don't have a Costco near me, but I'm lucky enough to catch one in my travels about every other month. It's a rare visit that I don't come home with a big wedge of their Manchego cheese.

I love a good smoked Gouda or cheddar or sharp provolone or freshly grated parmesan. It just tastes so good.
Locally, well it's a few hours north of us, is a cheese company in the 1000 Islands called River Rat cheese. They have the best XXXX sharp cheddar I've ever had. Their Port Wine cheese spread are our go-to when we want a little snack with crackers before dinner.
I could easily live on cheese.

I was born here in Vermont but my mother is from Europe so it's really exciting to see how much cheese beyond Cabot we have here now! I LOVE cheese but my body does better if I limit it. Cabot and Jasper Hill Farm cheese are sold at our Costco. Shelburne Farms is probably my "everyday" cheese, though they have competition from Grafton Village. The Vermont Creamery makes many favorites too, including their Bonne Bouche which is an aged goat cheese.

I'm a mild cheese person so favourite is Havarti. Can't stand Swiss. I love extra sharp cheddar in small amounts.

Cabot is my everyday cheese, but Shelburne Farms or Grafton Village would be a close second. The cellar aged Jasperhill (I think it was sold under the Kirkland brand) at Costco was/is wonderful. I have not bought a lot of Vermont Creamery’s cheeses (other than their Creme Fraiche) but have had them at various places and have really enjoyed them. Three Shepards and Willow Hill are other small Vermont artisan cheese makers that I have tried and loved. I lived in southern part of Sweden for a year and we would go to Denmark all the time to get cheeses. Those were the best shopping trips. I love European cheeses also. I long ago had a “double creamed” Gouda at one of the wineries in Napa. I still think of that cheese to this day and have never ever been able to find it or something comparable to it again. As you can see I think of cheese way too much. Happily, living in Vermont has allowed me to feast on so many varieties of cheeses made by a lot of local Cheesemakers and some great craft beers. It doesn’t get much better than that. I was hoping to get to the Shelburne Farms Vermont Cheesemakers festival this year but was not able to. It is on my bucket list for 2018.

i like a good aged, sharp cheddar. i like my cheese sharp, salty, and firm. i'm not into Bries and other soft cheeses.

My store had Stilton with cranberries that I’ve been eating for dessert this week. It’s delicious! That sounds so good! I'll have to look for it. My favorite is Boar's Head Chipotle Gouda, but I really haven't found many that I didn't like! Trader Joe's and Costco 😊

I love cheese as well but I am terrible at remembering names and varieties which sucks because if I pick up something at Whole Foods or Trader Joe's I'm often SOL because I rarely remember which one I loved more than the other.
I'll throw in that I adore Armenian string cheese (without the caraway). It's moist and slightly tangy ropes are sooo good piled into a hot piece of doughy French bread..ahh.heaven.

I was born and raised in Switzerland 🇨🇭 and that make me a cheese expert no to really but we do eat a lot of cheese and if I had to choose only one it would be the Gruyère. Cool! My husband and his family are from Switzerland. His father, a master Cheese Maker. They immigrated to WI and they made Swiss Cheese. 😂 No, really. We make our own cheeses here at our place. I love cheese.

we don't keep a lot of cheese in the house (other than shredded cheese for cooking) so the only SPECIFIC brand of cheese that we ever buy is Chalet Cheese Limburger cheese, from a cheese co-op in southern Wisconsin. Partly because it's the only US cheese company that makes limburger, but also because my BF likes their limburger better than the imported ones he's tasted. (they sometimes have it for sale in the grocery stores out here; I'm guessing that enough people ask for it for them to actually carry it, lol.)

my boyfriend double-bags / seals it in the fridge. And he doesn't eat it in the house, thank goodness; only out on the patio. With a thick slice of onion, yet! His German grandma and her side of the family started him on it. And yes, it DOES smell like sweaty socks... he loves really strong cheeses like that- he'd probably love a trip to Europe. I tried it ONCE, but couldn't get past the smell. (I looked it up; it's actually the exact same bacteria that causes stinky foot smell, lol!)

Beecher's Flagship is probably my favorite cheese, it's PNW local. Any aged cheddar, particularly with those little crystals it gets...yes, please. Kerrygold Dubliner, cheeses of that ilk.
I also have a special place in my heart for Cotija. And Havarti on toasted pita with a little brown sugar. Gorgonzola and Muenster. Mozzarella, especially burrata. Oh whatever, I'll have them all. Except goat.

I have too many favorites to name! I love to try different cheeses - we sometimes go to a local specialty cheese shop and get a sampler platter to try new cheeses. I tend to gravitate to hard/firm sharp cheeses but also love a good smooth gruyere, edam, butterkasse, havarti, etc. I don't care for Brie, but DH & DS like it and also other soft cheeses. DS likes smoked cheeses, but the rest of us don't.
This time of year is great for finding various cheeses with cranberries (love that!!). A perennial favorite with all of us is Kerrygold Dubliner.
