Good morning!
I decided to start this as a monthly thread this month, and if this one fills up too rapidly, I’ll change it back to bi-weekly.
Last night was spaghetti with bolognese sauce made in the IP.
Today will be a big treat. My local grocery store was having a manager’s special on fresh Turkey 🦃 drumsticks for $0.99 per pound. I bought 3 packs of 2 for a total of $4.50 for 6 drumsticks. I’ve had them in brine overnight and I’m going to put them in my electric smoker shortly and they will be ready for dinner.
It will be smoked turkey drumsticks and football in the Elaine Household today.

I just used the IP to cook the pasta for 2 boxes of “Suddenly Salad” pasta salad. It isn’t a huge time saver, except that it is nice to just dump in the pasta, 6 cups of water, set it for 5 minutes, and walk away until it beeps that it is done.

I finally gave in and made mini cheesecakes in my EPC. They were pretty awesome!
I bought 2 turkeys before Thanksgiving when they were $0.59/lb. I put both of them in the outside fridge to thaw, but neither did. I had to thaw out the one for Tday in the sink. I followed ChefSteps video instructions on how to cut up and cook a turkey SV, and it was awesome. The Tday turkey was so good, I decided to go ahead and cut up and Sv the 2nd bird.
I followed the video again so I ended up with 2 breasts and 2 thigh/leg combos. Each piece was bagged separately and breasts and thighs were cooked separately at different temps. We had one of the breasts cooked with Cajun seasoning for dinner Friday and it was so good. I seared it in my frying pan so the top was golden brown and the skin was crispy. The bird was so big, all 4 of us ate off of 1 side of the breast.
I’m going to keep an eye out to see if anyone puts their turkeys on special. This was really the best, and least hassle way, of cooking a turkey.
I finally tried Syracuse potatoes in the PC. OMG! I had bought some little potatoes a while back and they were a bit soft. They turned out so creamy. Because of DH’s CKD, I don’t cook potatoes very often and never with that much salt. I had some leftover risotto for him, though, so I treated DD, Mom, and I with the potatoes. Definitely a new favorite.

mlana, the turkey sounds so good! I’ll have to watch for more turkey specials myself. The smoked turkey legs turned out better than any we’ve had at WDW and at 75 cents a piece, quite the bargain. I have a couple more packages in the freezer and will smoke them when I smoke a turkey breast for Christmas.

mlana's post reminded me to ask this- I've been roasting radishes, red and daikon, instead of potatoes to save carbs. Most of my family has accepted them. I want to try substituting radishes for potatoes in the Syracuse recipe. Would you adjust the time? I hate scrubbing the darn little things Or I would have started experimenting blind.

I’m very sad to announce that my not-an-IP pressure cooker has developed what may be a fatal problem. The ring that holds the vent selector has broken, so the pot will no longer hold pressure. I discovered this when i saw a plume of turkey broth shoot skyward. The cleanup was NOT fun. there was no explosion, but let’s just you would be AHmazed at how far turkey broth can fly.
Luckily I have an IP in the garage just waiting to take its rightful place on the counter. I have no clue which one it is. I bought on Prime Day 2016 and my DD promptly took it to college with her. LOL. I’m kinda excited to finally have a reason to break it out. I don’t think i can find a replacement part for mine as it’s an older off model. I’ll check, just because I hate the idea of throwing something away that could be repaired, but I have little hope of finding anything.

The little silicone ring/gasket that held the safety valve in the Fagor Lux I had for a while fell off while I was cleaning the lid - unnoticed by me until I went to cook with it again and it wouldn’t come to Pressure because steam kept coming out of that hole. I had to pay something like $7 for a piece of silicone smaller than the size of a dime to be sent to me to replace it. The good thing for you is that you have an IP in the wings just waiting for a place of honor on your counter!

@scorpeo I made mac and cheese in the IP a few weeks ago. It was really easy and hands off. Perfect for a weeknight supper. I hope your SO likes it. My usual is the Martha Stewart one that is amazing but time consuming. I only make it during snowed in Sundays typically!

I used my SV to make 1/2 gallon or so of yogurt today. So easy !
I keep trying to make gumbo, our annual post Tday treat, but so far I haven’t managed to hold onto any turkey long enough to get it in my gumbo pot. LOL. I cooked 2 so I had 4 breasts and 4 thigh/leg combos. So far we’ve eaten 2 breasts and frozen 2 others. I pulled the meat off the carcass and a combo from the first turkey and my family asked for tacos that night. Yesterday I pulled the meat off another combo and Dd promptly called and begged for turkey with roasted Brussels Sprouts and roasted sweet potatoes for supper. Tomorrow I’ll pull the last carcass and another leg and, hopefully, get gumbo made. I have enough homemade turkey broth to make it, I think.
I really want to try making more cheesecake minis. I want to use half Splenda and half sugar this time. DH can have a little cream cheese and he could have a small one if I made it with sweetener instead of sugar. Any recommendations for recipes?

I have a bunch of turkey bones in the freezer. Some from this year and sadly, some from last year. I want to make some broth but I don't really want to add all the extra stuff. Can it just be made with bones and water? What is the bare minimum to add?

For me, the bare minimum involves one onion quartered, 3-4 celery stalks cut in halves or thirds, 3 carrots unpeeled cut in half, salt and pepper. All the veggies are strained out with the bones and tossed.

Yesterday I made 6 quarts of chili in my 8 quart IP. We had it for dinner and now I have 8 2-cup containers in the freezer for lunches. I don’t have a formal recipe, I just am sure to use one of Penzeys chili seasoning blends and either use rotel or diced tomatoes and a separate can of diced chili peppers for a little heat. Otherwise it is a variety of beans, ground beef browned with a diced onion, tomato sauce and beef broth. My secret ingredient is 3 tablespoons of baking cocoa. Tonight I have BBQ Bacon Meatloaf cooking right now also in my 8 quart. The plan was Chipotle for dd's birthday tonight but the weather sucks and Chipotle is an hour away. So it's tomato soup in the PC and grilled cheese sandwiches in the griddler and air fryer.

No leftovers whatsoever from the meatloaf. Teenage boys, one who is 6’2” at 16, are eating us out of house and home!
I was hoping for leftovers for meatloaf sandwiches for tomorrow as we have some snow on the ground, but no such luck.

I had two soup fails today. Well I made the Olive Garden chicken gnocchi soup, I thought it was good, but I made it for ds, who loves it at the restaurant. He didn’t care for it.
Then I made broccoli cheddar soup but I picked the wrong recipe. The cheese curdled! It was so weird. This recipe had you add hot sauce, I think that’s prob what curdled it. I tried blending. I added more cheese. It never got cheesy. It just stayed weird.
I made bacon and turkey bacon in the air fryer, and made myself a few pieces of French toast.

I made this pot roast on Thursday and it turned out pretty well! It's an adaptation of PW's pot roast and while not exactly like the original, it is a very close second. (I didn't add the fish sauce and worchestershire) We haven't liked pot roasts in the pressure cooker before this. I'm trying out a brined whole chicken recipe this week.

I did ribs last night and in my rush to have dinner before my meeting, I forgot to broil them! They were still good but not as good as they could have been.
Tomorrow I am going to make shredded beef for beef dip sandwiches. I think...depends on if I get to the store.

My husband bought an air fryer and I tried it out tonight. I had not really paid much attention to this appliance other than seeing people talk about them here. I made cream cheese wontons and egg rolls from scratch. I consider it to be a messy project so I made a large amount and froze 1/2 of it to fry at a later time. Anyway, the air fryer gets a two thumbs up from me. We all liked the end result. I predict that my teenager is going to be a heavy user of it.
