scrapmaven ......I imagined your kitties staring at you as a tasty brunch, and it made me laugh JoP ---Happy Anniversary to you and Mr. Pascoe! bc2ca ---That's so scary....prayers going up!!!! cadoodlebug ---Sorry about your diagnosis. jeremysgirl ----Hope your sinuses calm down soon! lucyg ....I LOVE chicken parm, and have tried to make it several times, but it never tastes the way I want it to. We used to have a restaurant that made it perfectly, but they closed. In desperation, I've tried several FROZEN versions, but--- I'm making pork chops with green bean casserole for me, and DH doesn't like the casserole, so he'll have plain green beans. I've had a craving for that casserole and haven't had it in a lonnnnng time. I also like putting some of those freeze-dried onions on top of the pork chops---soo yummy!!!!! DH doesn't like those onions at all, whereas I sometimes think I could eat an entire bag of them!

The lady by me at the restaurant last night had a bowl of their chicken tortillas soup and it looked so good I ordered some to go. So that and my left over queso and flauta is for dinner tonight. With some avocado and lime juice I’ll add to it.

Cute story, tuesdaysgone! Congrats one getting them to return their books! bc2ca, I've been watching the fire coverage on the news.So very scary! Add me to the list of those sending positive thoughts your way. Glad you joined us today, shawna! scrappintoee, I joke that my family would eat anything I put on the table as long as it had those french fried onions on top. For years I called green bean casserole the "onion ring dish" just to get my children to eat it without complaint. Worked like a charm.

cadoodlebug , I'm sorry that you have a new, not fun diagnosis. Hopefully, you'll still be able to enjoy fun food in moderation. JoP , Happy Anniversary to you and your very lucky dh. bc2ca , Praying that you and everyone in your area is safe from the fires. I know that some colleges are handing out masks on campus, because the air quality is so bad. tuesdaysgone, that is a very clever way to get your students to return their books.

I found this spice mix. John Henry's east texas Maple walnut rub seasonings.
Baked chicken with it. Rice with walnuts and cranberries. Homemade applesauce.
Oh my yummy goodness !

@pascoepea happy anniversary cadoodlebug in a couple months you’ll have the diet thing down I made spaghetti & meatballs. DD requested we go out for her 18th birthday to a chicken wing place 🙁 I had a chicken wrap. I hate wings. They gross me out. We’ll have the spaghetti tomorrow. Dd is going to zoo lights apparently I can’t believe my baby is 18.

Chicken cordon bleu, spinach, tomatoes, broccoli and asparagus. I made up for not eating a vegetable while I was in Oregon last month. DS had inari sushi and I had mac and cheese from the deli.

Do you make your own inari. Those pockets of tofu are really expensive at the Asian store. Have I? Yes and very successfully. Then I saw the inari shells at Marukyo my grocery store and I made sushi rice myself. They turned out really well. I marinated the shells in soya, mirin, sake and sugar and it makes a brine and you cook them for a few minutes. Season your rice with sushi mix (I buy bottled). Stuff and serve. Kantan (easy). I buy them now because they are perfect every time. I love inari!

cadoodlebug can you just follow an Atkins style diet? I know you don't have a weight issue, but my GP told me that this could happen. It would be great if you could just manage with diet and exercise (and I know you exercise...Zumba etc). I hope it works you don't need insulin. I wish you good health!
