Why is avocado toast all the rage? What’s your go to recipe?

I take a half ripe avocado and nice Italian bread (there is a local one I can get here) and I toast it to barely toasted, mash the avocado and eat. I didn't know you needed to put something else on it. We are pretty simple when it comes to avocado. Cut in 4 and eat.

This hits the spot for me I guess avocados are trending particularly high at the moment and this is just an easy, standby supper/breakfast idea. Whatever - it's lovely!

I add a hard boiled egg on mine and top it with Everything But The Bagel seasoning from Trader Joe’s.

Wholemeal seeded bread, toasted. Spread with some red pesto, top with slices of avacado, sprinkle over some finely chopped red onion, crumble over some feta cheese and finish with a light drizzle of balsamic glaze. Yum yum yum.

LOL - saw your title and thought of the wreck on I35 yesterday. A semi carrying avocados overturned and caught on fire. Now there was some toasted avocados.

For me it’s all the rage because it’s so delicious - avocado is nature’s butter!
I love two slices of granary toast topped with smashed avocado, salt and pepper and a poached egg.

Our favorite: thin-sliced toasted Italian bread, sliced avocado, sprinkle of crumbled feta cheese and then top with an over-easy egg.

I didn't know it was all the rage; I just know it's delicious. I toast sourdough bread and top it with some cream cheese and a slice of avacado. I'm picking up some other wonderful ideas from this thread.

I didn’t know it was all the rage. We like it as a quick and simple snack.
Bake bread slices for 10 min. At 350F. The kids like a garlic clove rubbed over the bread and then diced avocado put on, drizzle with evoo and sprinkle kisher salt. Me I like some minced garlic slightly cooked mixed with evoo, diced avocado, red pepper flakes, and kosher salt. Then that mix spooned on my toast.

My favorite is toasted bread or bagel, smashed avocado and lots of fresh ground pepper and sea salt sprinkled on top.
Sometimes at work we would do all that plus crumbled bacon.
Our local organic market makes a great guacamole—i often use that instead of mashing them up.
A local store that has prepared foods does an “avocado toast” breakfast-toast, avocado, scrambled eggs, bacon.

Just starting to appreciate avocado toast. I always heated up a corn tortilla and then smashed some avocado on it with salt. Roll up and snack.

I am easy. Mashed avocado on toast then sprinkle with salt and pepper. If I have more time, I will top with an over easy egg. Runny yolk plus avocado equals yummy!

yummm. Avocado toast. I use this recipe. Easy peasy. If one of my boys or DH is eating it with me, I will fry an egg and put it on top.

I didn't know it was all the rage either or that it's something often mocked as "hipster food", until I started seeing it all over Facebook, I just like it. I keep it pretty simple, just spread it on a bagel and sprinkle with Everything But the Bagel seasoning. I love avocado! If something on a menu has it, that's what I'm ordering when eating out

It depends on how hungry I am. On a thin bagel with a fried egg is my usual breakfast. Sometimes on toasted Italian bread with a sprinkle of TJ's quattro formaggi. Sometimes just smashed on toast with a sprinkle of salt.

Never had the avocado toast. I just cut the darn thing in half, sprinkle a bit of salt and spoon it. Guess I'll have to try it on toast!

I just really like it and I feel like I ate something good for my body.
When I see photos of avocado toast on menus and/or food blogs, I think they put way too much avocado on there. I wouldn't like that much.
I basically put 1/4 an avocado or thereabouts on multi-grain toast. Salt, pepper, red pepper flakes and a sprinkling of roasted pepitas (pumpkin seeds) from the bulk bin at the grocery store. Fantastic!

I like mine mashed up on toast (Dave’s Killer Bread in the yellow bag is my fave) and topped with a fried egg or just some red pepper flakes.

I’ve heard of it but never tried it. Aldi’s had a avocados on sale so I’m gonna jump on the bandwagon. Hope it tastes as good as it looks. Thanks for for all your recipes. I knew the peas would have some.

I feel like I need to try to make myself like avocado again. My past attempts have failed. I just don't like it. But I know it's healthy and easy. I have to go to the store today so I'll pick one up and try again. I do love toast!
