I'm having a some people over for a Fat Tuesday dinner. We all love food from New Orleans. I'm trying to plan a menu that is authentic, great tasting and of popular food. I want some extra choices so people can have options. I was thinking of
Appetizers ?
Main Gumbo Shrimp Etouffee (my favorite) Jambalaya but as I questioned people, lots said it's not to special and usually dry so don't know about this one PoBoys but a healthier version maybe blackened/grilled instead of fried. Not sure about this one. Red Beans and Rice (my husbands favorite) Corn Maque Choux
Dessert Bread Pudding?
Thoughts? Recommendations, changes etc. I don't mind putting in effort making things but don't want to do much last minute work. Thanks for any help

I like crab claws with spicy cocktail sauce, oysters in any form, and peeled shrimp. You could also move the gumbo into appetizer category and serve it in little bowls. I've had stuffed creole tomatoes as a side -- you could make them stuffed cherry tomatoes instead.
I love love love food from Louisiana. I'm lucky that DH is from there, and I get to stuff my face every time we go back.
ETA: add some pralines for dessert, YUM.

We are doing red beans and rice. I’ve made in the Instapot and it’s sooo good!

It's Mardis Gras, which is a huge celebration in Louisiana. The last hurrah before Ash Wednesday and Lent. Louisiana started as a French colony, with a strong influence from the Catholic church.

It is called Shrove Tuesday or Pancake Tuesday where I live, so the meal is pancakes with bacon & real maple syrup.

I love Shrimp Etouffee - my mom used to make this when she was missing home. How about Kings Cake? I would steer clear of Jambalaya. It can be hard to get right if you aren't used to cooking it. How about stuffed catfish filets with a spicy rémoulade?

I don't know yet, but thanks for the thread so I can get some good ideas. Normally we have pancakes, but this year I wanted to do a full Louisiana meal because my dd is leaving in August for a year in New Orleans. So I wanted to do something traditional for her.

I am not catholic, but growing up we probably did pancakes with latkes. And then fish on Fridays. Meals got really interesting if easter coincided with Passover.

That is such a hard question. Traditional Fat Tuesday dinner would be pancakes. Before you move into Lent on Wednesday, you need to have a big celebration to rid the house of the sugar, flour, butter, alcohol, etc. that you won't need during Lent. I like that tradition even though I'm not giving any of that up, so I might do something like pancakes and cajun sausage (andouille) with etouffee and salad. Dessert can only be a King Cake (you could probably still get a good one delivered in time).

We do the traditional Pancake dinner, along with bacon, sausage and eggs. While the other meals mentioned sound great, I cook those all the time so it's not a big deal for us. Pancakes are a bigger thing as we seldom have them.

Well, boss changed po’ boys to muffuletta sandwiches! I just ordered 3 King’s cakes for The day. Just need to figure out some sort of side dish or other noshing stuff to go with the sandwiches.

That's what started us doing this. Our son went to college at Tulane. What an experience for him and us. We all grew to love the food of New Orleans. Every year we would make a Fat Tuesday feast and my kids invited their friends over. They all helped in the cooking. It was a true labor of love... and made great memories. We have since moved to another state so we want to do this with our new friends now! Some said they're not Catholic so don't partake. I'm not Catholic so don't do Lent. I'm also not Jewish but do a night of their holiday favorites as well ! It's all about the food, traditions and celebration with family and friends for us. We even had New Orleans food when the Saints were in the Super Bowl! You just gave me a wonderful new tradition for my DH and I to start our married life with. Our first tradition is going to a local bakery for fresh bread on Christmas Eve and now we can add this. The best part: we already have most of the ingredients in the pantry to make these dishes! I love that you will start a tradition like that! It really is a lot of fun. You can even add a little decor... beads etc. Here's a link to my VERY OLD blog from 2009 of our feast then! Mardi Gras- favorite memories of 4 years on the Alabama Gulf Coast!!
Crab cakes would make a good appetizer and nothing wrong with grilled shrimp/fish for the po'boys. Every place we went in the South offered that choice.
Not sure why a non-catholic wouldn't participate- it's Mardi Gras !! Great food, great drinks and lots of fun

I grew up in South Louisiana. Mardi Gras was a big deal. It was the last day of debauchery before Lent. We had cochon de lait, BBQ, freshly made sausages, boudin, sweets of every kind, beignets and coush-coush with bacon on the side for breakfast, sometimes king cake. Lots of meats, no seafood or egg dishes. Most of the day was spent outside playing and having a great time. The adults sat around drinking beer/soft drinks/homemade root beer (sassafras), lemonade, spiked punches, basketball hoops, volleyball net, horse shoes, long jumps, hula hoops, jump ropes, etc. LAST DAY of crazy fun play for next forty day of LENT. Which brought no meats, at least on Wednesday and Fridays, earlier beds, increased reading, decreased TV time, service to the community, etc. AND lots of fish and seafood and egg dishes for replacement of the meatless meals (seafood gumbo, fried fish and shrimp, quiches, fish po boys, etc). We rarely had desserts during Lent because my Mom gave up making desserts during Lent-she was mean like that! LOL

We are in Pittsburgh, so I never heard of eating anything specific. It doesn't seem to be a big thing here. But my husband's been to New Orleans for work, and he says it's quite an event there! Fun seeing what you all are doing!
