What an AWESOME story of your precious son !!!! leannec -----Glad your group went well today. tuesdaysgone---Continued prayers for you and DH. newlywoods03 ---It's fun to read about all the excitement of your trip! DH will have leftover chicken tortilla soup.....due to "black clouds" of depression looming again , I have no desire to eat, BUT cadoodlebug 's----horseradish meatloaf sounds yummy! I LOVE horseradish with prime rib and roast beef, but have never had it in meatloaf.....maybe I'll get the energy to make one.

Because Valentine's Day = Ash Wednesday this year, we'll have steak tonight with roasted potatoes and green salad. Maybe green beans, too.

@calimom2 I have chills reading about your son!
DH is out of town again, so it is just the kids and I. Tonight we will chose between chicken tenders, or leftover meat pie. These mains will be accompanied with tater tots, peas and carrots. It is not a very exciting dinner, but at least they are being fed, right?

Update: I forgot there was a HelloFresh box arriving today, AND it came early for once. DS wants something from the box, so I'm making honey-glazed pork tenderloin with roasted sweet potato and green beans. I'll make the chicken soup in another day or two. Yes, littlemama, it's homemade stock. I usually add some store-bought, too, though, because I like a lot of soup in my soup. @calimom2, I'm thrilled that your DS is doing so well. I think he is special to lots of us.

I think he is special to lots of us. I like my soup really brothy, too. I like the flavour strong so I boil chicken bones as well as putting in Better than Bullion. I like a lot of meat, some vegetables and pasta. I do love dumplings, too, a tremendous amount but I can't make them well. They come out like hokey hockey pucks.

I made pan fried thin pork chops with a cream sauce and mushroom risotto in my pressure cooker in 7 minutes flat. Yummy!

I made the macaroni casserole. It was decided that they like ground beef better than ground turkey. (They are mistaken, but all I could get today was ground beef). I used a LOT of cheese on it and it was really good that way. I should have used more maybe. It was really good. I used 2 different kinds of tomatoes. One were whole stewed and the other were crushed. Both brands were equally good. I just needed a big can and a smaller can. I made salad for them and we had asparagus.
We seem to be alternating grocery shopping days. This system seems to work and it works well. I went today and Sunday. My dad went yesterday and he knows to go tomorrow. For the time being I will see if this will work for us.
Tomorrow night is DS' last night at home so I am making steak. He is a little bit stressed out so he is better off figuring things out by himself. I can't help him as that is what he is like. He has been busy packing all week long and is looking forward to this chapter of his life.

Boy-friend made oven baked chicken with green beans. My texture-hungry appetitite made me stop trying to force feed and I mixed it into a salad so I could eat it.

I need some help, please. I have a really good friend and she is transitioning to becoming a vegan. She is giving me all the reasons in the world why vegetarianism and veganism is better than eating meat. I am trying to stay supportive and encouraging, but I don't agree with her reasoning (otherwise I would be a vegetarian myself). What can I say to support her other than "that sounds great" or "yum"? I don't love vegetables. I tolerate them but I don't like them a whole lot. I love talking to her and all, but everything is about vegetarian/vegan lifestyle now. Her husband owns an Italian restaurant and he eats meat. How do I be supportive and encouraging? Her whole life is this new project now.
