I was going to make seasoned chicken and roasted red potatoes last night. However, I bought the wrong chicken. So, I made chicken nuggets, instead. Dh had a salad. That means tonight's dinner is chicken and potatoes with roasted brussels (again, ew) sprouts. YUCK! I'm channeling my inner 6 year old.
What's on your menu?
Have a fulfilling day.

Tonight we are having leftover beef stew.
Today and tomorrow I am going to be delivering flowers for the shop that my daughter works at. They needed some extra drivers so Kaitlyn volunteered my services!!

Tonight we are having the macaroni casserole which is ground turkey, elbow macaroni, stewed tomatoes, chili sauce and lots of cheese on top. I haven't made this in a while and DS is moving out this week so I said I would make it for him tonight.

Spaghetti carbonara, because it is quick and easy to make, and that's the most important thing right now. (Partly because it was beautiful outside today: crisp air, sun was shining, lots of snow....and partly because I'm still exhausted after the weekend and my shoulder (the one I injured earlier this winter) hurt like h3ll after getting that car out of the snow yesterday). Ah well, I can pick up the chocolate with my right hand, so I'll be fine.

Oh my goodness.. the reveal was the best! All the kids were super excited! It took our boys a little bit to finally grasp what they read, but once they got the while idea it was awesome!
47 days to go! So glad I printed out a countdown so I wouldn't have to hear about the days remaining lol.
I think it's tacos, beans and rice for us. I'll have a taco salad.

DH is out for dinner again with the 'women in IT'group he is mentoring, so I am on my own. There is leftover chilli from Sunday lunch in the fridge, so I will heat that and cook some pasta or rice as we ate all the corn chips on Sunday.
We had a fun day at Kinder today - it is 'Faschingdienstag' here, which is the southern German version of Karnival. Most of the kids came dressed up and we made masks for our craft. I also made some pancakes for snack, as we can't neglect the English/US/ Australian traditions that many of the children on our group share! Here they eat Krapfen, which are a filled donut - yummy, but very messy and very big for small children!

I took out a carton of chicken stock to defrost because the 8yo has been requesting chicken noodle soup (or could be matzoh ball soup if that's what he wants). But I might save it for tomorrow. It's a non-school day and we're going to see the Peter Rabbit this afternoon. So I was thinking we might stop afterwards at Costco for a $1.50 hot dog dinner instead.

We ended up having Horseradish Meatloaf last night with roasted asparagus, green salad and fruit salad. I think tonight will be flank steak with baked beans, green salad and fruit salad. Asparagus are crazy inexpensive right now so we've been eating a lot of them!

The Birdhouse Lady, you're going to drive around and bring smiles to lots of people. Sounds like a fun way to volunteer, even if it's just to help out your dd's boss.

Obviously sesame oil didn't make the trip from MD to SC so if DH wants his orange chicken, it's back to the store! We have leftover rice from last night so that's what's for dinner. Maybe apple crumb pie for dessert... or ice cream... or both!

Cheese tortellini and a Caesar salad will be served her tonight. I'm thinking of making the tortellini in a lemon garlic sauce with a little spinach tossed in instead of my more usual tomato or pesto sauce. newlywoods03, I had a big grin reading your update.

scrapmaven - at least you don't have to eat the Brussels Sprouts to be polite! lucyg please tell me that the chicken stock is homemade. I don't want your little old man to be upset! Dinner tonight is leftover Swiss Steak and Rice. Whatever is still left will hit the garbage - we are pretty much one night leftover people and this wouldn't freeze well.

Ds has speech communication clinic today and dh is home with an upset tummy. Think it was the cilantro in the salsa where we ate yesterday on our date. Keeping it simple with roasted chicken, mashed potatoes, gravy, veggies, and blueberry muffins. Btw, ds turned 12 a week ago. Not sure if you all remember but he is the one who was a NICU baby and then his body was shutting down a age 2 and he was in the PICU highest level and we werent sure he would come home. But turned a corner. Then his GI issues got worse and then had most of his colon removed and was on TPN. Then had complications from that on top of severe pulmonary hypertension and needed a heart lung transplant as well as large intestine and liver transplant. Team was certain he wouldnt make it to age 5 let alone 10. Little dude turned 12. His body has almost completely did a 180. On medical formula, no transplants needed, off all life supportive meds, off oxygen, off tpn, off pulmonary meds. Growing, thriving, living life. 12. He is a miracle. No one can explain why his body did that. Me? God said not yet son you have much to teach people and life to live. My boy. My miracle. Last week ds and dd were sick so didnt post much. But for those who remember, he is now 12

I am not sure but this is a heart warming story!

Something with ‘grey squash’ which is a horrible name for a beautiful little squash. But I have 3 if them that need to be used and I’m going to use them.
Probably stewed with onions, garlic, basil & tomato.

DH is feeling a bit better today, but still not wanting to be too adventurous with eating. I think we'll do some rice and chicken. He is still making the rounds with doctors and has a few more tests, but hopes to be back at work on Friday. After a week of daily doctor appointments, work will be a pleasure. @calimom2, what an awesome update on your son. Made me smile! newlywoods03, I was actually thinking about you and the boys when I was driving home from work. I was curious to hear about the reveal.
