I googled some recipes yesterday, got an over view and made it for the first time last night. I added butter and ground pepper and it was tasty but rather too wet. (I did leave it for some steam to evaporate after boiling it.) So do you have a variation you love, a method that leaves it less wet or any other tips? Do you add Parmesan? Oven bake it for a while? Tia

I have 2 frozen heads (cauliflower) that I need to do something with. This was one of the ideas on my list, so I will be looking for ideas too?

Having read a few more recipes it seems boiling it was a mistake- I’ll steam it tonight 🙂

I do not boil the cauliflower in water. I use a steamer basket in the bottom of a pot, add water to the bottom so the cauliflower isn't sitting directly in the water. Once I drain the pot, I add the cauliflower back into the pot (without a lid on it)on low heat for a little while. Doing that last step seams to help evaporate some of the moisture.
Oh! I also like to put a few cloves of minced garlic directly in with the cauliflower while steaming. If you like garlic, it gives it a nice flavor!

I finally, finally read a tip that helps with getting all the water out. Put your steamed or boiled cauliflower in a colander. Take a glass bowl and mash down on the cauliflower pushing all the water through the colander. Works like a charm - I then add cream cheese, butter, bacon bits and parmesan to make mashed cauliflower in the food processor.

After steaming the cauliflower, I place it on a clean dry towel & gently press any excess liquid out before mashing, lol. Then I whip it in the food processor using THIS recipe. It's yummy!

I love it anyway I’ve made it so far. Sometimes, I put it thru the food processor first so it’s fine. Then I steam it in a mesh colander in the pot. Then I can squeeze out any extra moisture before I mash it. A few quick flavorings are: Garlic & butter Ginger & sesame oil Pepper & Parmesan cheese
But you can do pretty much anything with it. I’ve make pancakes ( like latkes ) I like them as cauliflower pancakes we’ll enough but they aren’t latkes, especially to the kids. Just a different texture.

I haven't made it in awhile. I'm the only one that eats it. And, I just realized that I tossed the steamer. Oops!
After steaming the cauliflower, I put it in my Vitamix. Add a little butter, pepper, and some cheddar.
I had to get beyond the idea that the texture would be similar to mashed potatoes. I did have a few that were runnier than the rest. I can't remember what I did differently. I think it was why I quit adding milk.
