I’ll be going to Nashville the last week of May for a conference for work, but I’ll have some downtime (including a Friday night free). I’ll be in the Grand Ole Opry area.
I’m not a huge country fan so I’m not really interested in going to going to Country music museums or shows.
Are there any local scrapbook, stationery, or other cool shops that I should include in my trip? What about good places to eat at night that won’t be too crowded?

What’s over by the Opry is mostly chain restaurants and a big outlet mall. No scrapbook stores in town, sadly. Our favorite place to take out of town guests for dinner is Edley’s, which is barbecue. There’s one in East Nashville and one in 12South, which are both funky neighborhoods with little shops and boutiques. Busy on the weekends but not too bad during the week. I also like Martin’s Barbeque, the closest one to me is in Mt Juliet and there’s a Joanna across the street. Walking through the Opryland hotel, especially if the weather is rainy, is neat. Depending on how much time you have one of my favorite ways to spend an afternoon is walking from around the Farmers Market downtown then over to Bicentennial Mall up to the state Capitol. Centennial Park and the Parthenon is a good walk too. Even if you don’t like country music there is still tons to do! Let me know if you need any other recommendations!

We've been to Nashville a couple of times in the last few years, and I absolutely love Hattie B's hot chicken. I'm not a fan of super hot, so I just get the mild, but it is so good. I'm not such a fan of the location near Vanderbilt, though -- it just seemed kinda run down to me. Anyway, enjoy your trip!

Thank you so much dudleypippen I’ll be in my own car so I’ll have access to get out and drive a bit as time permits. The conference is actually being held in the Gaylord Opryland Hotel. Is that the one your referring to? I’m not staying there but I’ll be spending a good bit of the days there. I don’t eat pork or beef but love barbecue chicken or turkey. Knowing that, would you still suggest Edleys or Martin’s?

Yes! Edley’s has good fish or shrimp tacos and both places also have barbeque chicken. Rosepepper in East Nashville is great for Mexican. Hattie B’s is considered to have the best hot chicken in town but by no means is the only place that serves it (Prince’s is also popular). I had a really nice brunch at Cavier and Bananas recently. Hillsboro Village has Fido, Pancake Pantry, a Jeni’s ice cream and some little boutiques. I still love Loveless Cafe although it’s a good drive from the Opryland area. The Wild Cow is a vegan/vegetarian restaurant in East Nashville that’s good. If the weather is nice and the Sounds are playing at home that’s always fun, or you can rent a bike at the greenways. Radnor Lake is beautiful but parking on the weekends can be tough to find. Nashville has tons of murals around town that are popular too (especially the wings in the Gulch). I would invite you over to my house but we are going to be leaving for vacation that week!

The Gulch is fun and low key-compared to downtown Nashville! It you can drive, downtown Franklin is fun! They have great shops and places to eat and music! I'll be there in June and I can't wait!

If you want to try out Biscuit Love Cafe in the Gulch, skip the line outside and see if you can get a seat at the bar inside! I always have luck with that when I'm by myself (and free parking for the first hour in the deck across the street).
I know you're not a country fan - but they have lots of other stuff in Nashville! U2 is here towards the end of May if that's your thing, and be sure to check out Ascend Amphitheater which is right downtown. And if you go downtown, please go eat the Macaroni and cheese with hot chicken at The Stillery, which is on 2nd Avenue. I'ts amazing! I've never wanted to finish a dish (I couldn't) more than that one. haha!
I know you're not a country fan, but I would check the schedules at The Opry (which is usually country) and The Ryman (not always country), just because they are such great historic venues.
I also second the farmer's market / Bicentennial Mall area. And I also like Franklin downtown area, but it's about 30 minutes from where you are so you may not want to drive that far.
