I recently received my free Soul Box from Penzey's, and in addition to the jar of curry powder in the box, it also came with a sample size bag of curry powder. I am taking this as a sign that I should try to make something with curry powder. Can anyone point me in the direction of an easy recipe for an Indian food newbie? Not only have I never cooked Indian food, I have never eaten it, so this will be an adventure.
This is the Penzey's Now curry, if that matters. The ingredients are turmeric, coriander, cumin, garlic, black pepper, fenugreek, cinnamon, fennel, nutmeg, white pepper, cayenne red pepper, cilantro, cloves, cardamom and ginger.

Just google curry chicken or butter chicken. I make curry chicken weekly we love it so much. Can make coconut curry chicken - that’s probably our favorite

Ina Garten (Barefoot Contessa)’s curry chicken salad. It’s the best ever. The Major Grey’s chutney is a must for it and worth the hunt if your favorite store doesn’t carry it. I’ve found it at Wegman’s and Food Lion here, but haven’t checked our other stores (Safeway, Giant, Harris Teeter and Shoppers Club are our other major stores here.) Curry is one of those spices that varies a lot from brand to brand because it is actually a spice mix. So you may increase or decrease the amount you use, depending on your taste and the strength of the blend. And not every brand has the same mix of spices. So don’t be afraid to experiment a bit! I cook a lot of curries, both Indian and Thai, but funnily enough I rarely use curry powder. One of my favourite recipes to make using curry powder is a tuna curry and rice slice. I've been making this dish for probably 35 years! Curry is one of those spices that varies a lot from brand to brand because it is actually a spice mix. I add it to my chicken salad: sweet pickle, celery, granny smith apple, mayo, small squirt of mustard, a little pickle juice and a good amount of curry powder.

Coronation chicken salad chicken and nuts and fruit in a curry sauce. Kedgeree smoked fish rice dish with hard boiled eggs, mix with yogurt and marinate chicken before grilling.

This is an easy Thai curry. The recipe calls for 2 Tablespoons which we think is a bit much. 1 1/2 is better. Coconut Chicken Curry

My go to curry dinner is from the Penzeys catalog, but I couldn’t find it online, Basically you take some flour and curry powder and a pinch of salt and shake and bake style some boneless skinless chicken breast pieces. Then you melt some butter in a skillet and sauté some onions until lightly browned then add the chicken pieces. Let them brown without stirring about 3 or 4 minutes. Then add a scoop of rice (probably a cup and a half) and a can of coconut milk and about half a can of water. Stir and let it come to a simmer then cover and reduce heat to medium low and cook until rice is done. I have no idea why, but sometimes it is 25 minutes, sometimes it is 45. I don’t measure this one much, but my scoops of rice are always the same. I think you were meant to add raisins at the end, but I never do that and we top it with coconut chips from Trader Joe’s rather then almonds, since I am allergic.
It is super delicious and even my kids ate this one, and they were not curry people,
Another thing I used to do was make curry chicken pizza. Pretty much cook chicken drenched like above in curry powder and coconut milk and throw on a bobali crust with roasted red peppers and a bit of mozzarella.

I've made a curried whole head of cauliflower in the Instant Pot, and it's wonderful. (and wonderfully easy)
