You must try Paula Wolfert's Mint & Egg Salad! You must grate the eggs - it is life changing. - 4 boiled eggs grated
- 1 cup slivered mint leaves
- 1 cup slivered green onions
- 2 tsp chili flakes (or to taste)
- 2 tbsp EVOO
- juice 1/2 lemon
- sea salt

"best egg salad" <blech> ...there is no such thing, lol!! Boiling an egg is one of the worst things you can do to it, in my opinion. (eggs are only for omelets or quiche!) back to your regularly scheduled thread- just had to interject my $0.02.

I am not an egg salad fan, but my daughter is. She made an egg salad a couple of weeks ago and instead of using the mayo to hold it together she used avocado. So, there is my egg salad contribution. Yeah, I tried that and no one could get past the green-ness of it.

Everyone loves mine. DH says its like chopped up deviled eggs. It basically is.
Hardboiled eggs, miracle whip, yellow mustard and a splash of sweet pickle juice.

I think the biggest mistake people make in my opinion is adding to much mayo. I add just enough to make it stick together.
I also add a little dry mustard, pickles, cayenne pepper, a splash of Worcestershire sauce and salt and pepper to taste. I spread it on bread and then top it with avacado slices.

I've found that I do like it sometimes - especially if it has a little 'tang' to it from mustard. I would not care for a plain egg salad made with mayo and no mustard.

But my husband doesn’t like boiled eggs either.

I grew up eating it with mayo, salt and pepper, and sliced green olives. I still love it that way, but I’m excited to try a few of the variations mentioned here.

I didn’t grow up eating egg salad but I basically make it like I do deviled eggs—I mix the yolk with a little mayo, and a small amount of dry mustard, then I add finely chopped red onions and sweet relish. Then I chop the whites and add salt if necessary. My step mother uses Marzetti slaw dressing instead of mayo and mustard powder and that is good too. I think most people use dill relish but I prefer sweet.

Boiled eggs, celery ribs chopped very fine, small amount of Hellman’s / Best Foods and generous sprinkle of Spike seasoning. It’s in the specialty spice aisle at supermarket. Try Spike, it’s a multi-herb salt seasoning. So good!

I always start off with chopped eggs, Hellman's mayo, squirt of mustard, salt, pepper and sugar. Sometimes I'll add fresh dill or horseradish.

Eggs chopped into perfect little squares by 3 rotations in an egg slicer Mayo (newly obsessed with Duke’s now available in our Colorado Super Walmart) Big squeeze of sweet pickle relish Freshly grated black pepper
Served on toasted wheat bread with lettuce and maybe tomato Or eaten with Triscuts. YUM!

Boiled eggs, chopped both ways in the egg slicer, mayo (Hellman’s only and always), iny bit of mustard, and heaping generous amounts of dill pickle relish. Salt and pepper on toasted English muffin. Topped with two crispy strips of bacon.
One of my favorite meals.

I like mine with sweet relish! Makes them a little deviled egg-ish. mayo, eggs, sweet relish and a small squeeze of mustard. Yum!
