I'm having a friend over for casual supper tomorrow night. It's hot AF so I'm not wanting to cook too much. I'm leaning toward a Greek-style chopped salad with chicken, tomatoes, artichoke hearts, feta, olives, etc. What would you suggest for a side dish with that? Pita bread comes to mind but I'm not even sure where to get that. And I'm thinking a nice cold fruit salad for dessert, but I'm open to suggestions on that, too. It's casual, but I also want to pamper her a little; she lost her husband in May. So I want it to be a satisfying meal. Thanks!

Hummus and Pita would be my choice with greek salad. (you can find pita in the bread section of the grocery store, or if you're feeling ambitious you can make it yourself in a skillet - Recipe here) Fruit salad sounds delicious, if you want to fancy it up, whip some cream or do a honey poppyseed dressing.

Pita chips would be just as good as pita bread, if those are easier to find. I would serve hummus and tzaziki for dipping.

We like grilled naan bread and tzatsiki with Greek salad, but good even if not grilled if you don't want to turn on the oven or BBQ.

Pita bread, plain or with tzaziki (which I can't spell!) - Greek style pita bread is different from middle eastern pita bread, but for this purpose, it shouldn't matter) Rice Pilaf
Mixed fruit or brownies or ice cream sundaes with brownies or mixed fruit for dessert

I would go for the hummus on pita or crackers if you can’t find the pita. Grilled eggplant? I do a Greek salad type of dish that’s pretty much like yours except instead of lettuce or greens I add pasta and it’s a one dish meal.

We prefer a Mediterranean flat bread to pita. Trader Joe's has a good one. My Greek MIL loves to serve watermelon for dessert on hot days. I love this watermelon salad as a side dish: - cube half a mini-watermelon
- slice 1 cup loosely packed fresh mint
- 1/4 - 1/2 cup crumbled feta cheese
- drizzle with a balsamic glaze and toss
Another treat on a hot day is frozen grapes. Only take out a small bowlful at a time because they are a little gross once thawed IMHO, but so wonderful to toss in your mouth fully frozen.

I would round it out by having some grilled chicken on the salad—we use a Greek dressing and marinated it and grill or bake or you can just pick up a rotisserie chicken!

Pita it is! LOL. I'll see what I can find. It certainly would be wonderful with hummus. Thanks!
