I am taking dinner to my niece this evening, and probably another day or two within the next week. Her husband just had surgery. I haven't done this in a long time, and can't think of anything to bring! I know that sounds ridiculous, but what are your go-to meals to help someone out? No allergies, nothing weird I have to steer clear of or consider. Easy transport, easy re-heat, tastes decent as leftovers. I guess something on the mild side, considering her husband's surgery situation.
Give me some suggestions, ladies, please!

How about something simple like lasagna, bread, and a nice salad. She would have plenty of leftovers to freeze if she'd like.

I took some meals to a fiend over the summer - I took a couple of frozen meatloafs and in a big gallon ziploc I did Honey Garlic Chicken thighs for the crockpot. It's great served with rice. The ziploc was frozen so they could thaw and throw in the crockpot whenever. But i was taking meals for them to use later. I thought about lasagna, I'm not sold on it mainly because of the mess involved for me, isn't that terrible!?

Pasta, salad and fresh bread. Nothing spicy or rich. A roast chicken either Costco or homemade w/roasted red potatoes and salad. They can use the leftovers for more meals. There's nothing wrong w/takeout from their favorite takeout place, either.

A really kind friend has made us some meals while I've been having surgery and chemo...enchiladas are great, and she made a lovely frittata (we're veggie, so meat options are out). Honestly I'm also craving a chinese takeaway so maybe a gift card?

Penne pasta, cook until Just done. The pasta will cook more.
Ragu spaghetti sauce. No it has to be ragu.
Velveeta. Has to be this crappy gunk.
Mix the pasta and sauce pour into whatever pan that you never want to see again.
Cube that nasty shit called cheese.
Gently mix in with the pasta.
Bake just until the not cheese has started to melt, or if you are taking it over for dinner that night, let it get melt.
Don’t stir it. The melty blobs are what makes this dish.
You can add ground beef if you want.
I has been asked for second dishes of this.

Tuna casserole, ghoulash, creamy potato soup or creamy chicken noodle soup (use rotisserie chicken to make it super simple). All these reheat well and you can add a bagged salad and rolls or bread. Cut fresh fruit for dessert or an easy snack. creamy chicken noodle

I love my recipe for chicken enchiladas with a creamy green chili sauce. They are even delicious reheated. They can be frozen without the sauce. M family also likes when I am too lazy to roll the enchiladas and just make the sauce and dump in the chicken filling and a large amount of cooked pasta.
Filling: Cook chicken breasts or whatever pieces you want in the crockpot, IP, or on stove, saving the broth. Saute peppers strips and sliced onion in small amount of oil (or use a bag of frozen pepper and onion mix) along with minced garlic Cool slightly, add shredded chicken and generous handful of cheese (Colby Jack, or whatever you prefer) Season to taste Roll in tortillas, using about 1/3 c mixture, depending on size of tortillas. Place in sprayed baking pan
Sauce: Melt 3T butter in saucepan and add 3T flour to make a roux. Cook over med heat for a minute or so Add 2C of chicken broth and 1 or 2 small cans of chopped green chilis (depending on your preference) Heat/stir until mixture begins to thicken. Add more broth if it becomes too thick. Remove from heat and stir in 1c of sour cream (if you have it, I have left it out before and it was fine).
Pour some of the sauce over enchiladas in pan and top with more shredded cheese.
Bake at 350 until hot and bubbly and cheese gooey. Serve with any remaining sauce.
While making, taste and season to what you like. I also have been know to make extra sauce because it is really good.
Again, if you don't want to roll enchiladas, make sauce in large pot and dump filling mix in and then stir in your favorite cooked pasta. Serve with some shredded cheese on top.

But many people have never had what I would consider "gourmet" or "true" pasta recipes so this tastes great for them. i like to take something different. if you can find out if they will use it that day or not, that will be a help.
i have taken baked potato pizza and salad. hot dogs and fixins, a pot of soup. spaghetti. really anything is good. we did get more than a fair share of lasagne when we have been brought meals.

But many people have never had what I would consider "gourmet" or "true" pasta recipes so this tastes great for them. Plus it is a recipe that fits the budget of those that have a small grocery budget. Actually I think sick people like this because it has some taste( not to bland), and not spicy. Kind of like eating oatmeal. And have you priced velveeta lately, not a cheap food product.

So are the table coverings and utensils. Well probably, until the dollars store gets rid of a lot of this stuff and then wally’s Will raise the price sky high. The last time I bought pans there the price was 89 cents.

My family loves Pioneer Woman chicken spaghetti. It is really, really good as written, but I usually take the lazy route and use a large rotisserie chicken and a box of broth or stock, instead of cooking a whole chicken from scratch. Or I just cook a bunch of chicken breasts instead of the whole chicken. Just be sure to cook the pasta in broth (can add more water as needed) because it really ups the flavor.

I would prepare crock pot meals—
Do all the prep, place everything in gallon zip bags and deliver them.
This way, they can use them when they want, freeze any that they might not get to right away.
Then just give instructions on dump and cook for how long.
Easy peasy!
