I need some help. My in-laws are diabetic and want candy for Christmas. I have searched online for recipes and they contain erythritol, and Sukrin fiber syrup. No one locally has it. I can order from amazon but I really have no idea what I need.
They want ant caramel pretzels (caramel in the middle) covered in chocolate and chocolate aNd peanut butter fudge. They have both moved to the nursing home this year so I am trying to make this Christmas a little more special. Can’t get the usual gifts...

did they specify that they wanted sugar-free? because honestly as a diabetic, I would MUCH prefer to have a small portion of real candy - the sugar free tends to have an aftertaste and often has GI impacts, ime.
Also - if they're on insulin, the dose can be adjusted to take the candy into account. I'm not, so I have to be extra careful about not overdoing the carbs but I can still fit in a cookie her or a piece of candy there esp. during the holidays.

I'll add that frequently sugar free candy has just as many carbs as regular candy. It's just a little different composition. SF candy affects me the same way that any candy does. Unless they have asked for it, I'd use regular ingredients and try to make smaller portions. So mini pretzels with a smaller amount of caramel. Cut the fudge into small squares--probably half the size of what you would normally cut them. If they want SF, go to Walmart and see what they have. Walmart.com has SF Werther's soft caramels and SF chocolate chips, with 2 day shipping if you don't have a Walmart. Sometimes I've seen SF candy in the drug stores, too. Good luck! Also, many people develop digestive upset from the sugar free candy. One must really pace themselves with it.

If you want erythritol, you can get Swerve at lots of grocery stores now, and also amazon. Whole Foods also has an erythritol product you can get.

I have baked with erythritol before, but not those specific items. This blog has a ton of dessert recipes that might inspire you. Another easy to buy option is Lily's chocolate bars.

I double ditto not doing sugar free unless they specifically asked for it. Like mentioned above it's usually just as high in carbs, has more icky ingredients and doesn't taste as good. My daughter has T1D and we don't do any sugar free other than the occasional diet soda.

Do not do the sugar free candy. Every diabetic I know says they would rather have a small amount of the real stuff than suffer with the GI distress of eating half a box of sugar free candy.

I find that a lot of older people with diabetes THINK they can't have sugar....and then they go eat things high in carbs. If I were receiving homemade candy, it would make my day if the gifter made regular candy and included the nutritional information and serving size based on the ingredients they used. I could then eat an appropriate sized serving.
If they are doing "exchanges" rather than counting carbs, one exchange is roughly 15 carbs.
