We are hosting tonight and I have a 22.75 lb rib roast to cook. Not sure what I was thinking buying one so large, but DH wanted leftovers and we have 14 adults for dinner. I think that beast is going into the oven at noon so it will be ready by dinner time. Thankfully, DS is working at a bakery this year so desserts have been purchased and will come him with him after work. Anyone else start cooking?

Dh put the prime rib in the smoker just a few minutes ago (after he started it in the oven for the first 20 min), we're kinda winging it, not sure exactly how long it will take to cook in there. Hoping for dinner around 4:30 but we're not really on a schedule so we'll see.
Side note: has the quality of prime rib really gone down this year or does our butcher just suck? I actually complained on their FB page because for a $100 piece of meat we're pretty ticked after we unwrapped it (though stuck because, well it's Christmas and our options are pretty limited).

Just put the ham in the oven and made the Christmas Pearberry Sangria. It has to have time to melge before guests arrive at 5.

Just prepping all the stuff to go with the Seven Fishes, but nothing gets cooked until just before it's served.

Here’s the pic but it has far more fat than normal plus they added extra fat (which they’d run thru the cuber) to the top not to mention they gave us ez-carve (bones removed and tied back on) when we specifically requested regular bone-in. They did call me and are giving us a gift card for a portion of the cost and were very apologetic so it’s fine. They would have exchanged it but it’s already baking now.

I sent DH to pick it up at the grocery- it’s already fully cooked. Does that count? 🤣

We’re mostly off the hook for cooking because we got invited over to a friend’s house for dinner tomorrow. They’re having lasagna and we offered to bring something, so I just made a HUGE (as in, the biggest Tupperware bowl I own that I usually only use for punch huge) antipasto salad. We will also bring three loaves of Italian bread sliced up and slathered with garlic butter, wrapped in foil and ready to put in the oven. Bringing that (and offering to help with dishes after) sounds like a decent trade off to me!

That's a lot of fat that they left on that one end and the top looks mangled. I usually buy from the grocery store or Costco and have never dealt with a butcher adding fat back.

I’m boiling noodles today, pot roasts are in crock pots for stroganoff, fudge is being made, and I’m researching drinks right now, we hit the liquor store this morning and going to our friends this evening.

Wow, that’s not a good looking roast at all. I’m glad they responded positively. I hope it ends up being the best Prime Rib you’ve ever tasted. I’m throwing in a lasagna for dinner today. But I’ve made my stuffing, and made my gravy juice from the neck and assorted organs in the turkey cavity. I’m debating if I want to do the potatoes tonight, and reheat them tomorrow. Merry Christmas everyone!

We are spending Christmas with my folks. I made the potatoe Carl’s and soda bread for an Ulster fry (breakfast tomorrow). Made a vegetarian stuffing with pine nuts (to heat up tomorrow) and a veggie lasagna for DD.... spending Christmas Day at my brothers so they are on the hook for the big stuff!!!!! (We will head over at lunch so I am sure we will have a few things to help out with)
I hope everyone finds time to relax and enjoy the next few days. Merry Christmas and/or Happy Holidays

We are doing a small dinner for me and DD and her godmother, who requested Lasagna Soup. I will be making that along with the Tortellini Poppers appetizer, tomorrow morning. Just now I prepped homemade croutons made with sourdough bread and fresh thyme and the homemade caesar dressing for caesar salad. Later I'll be making the Peppermint Ice Cream base, and will run it through the ice cream maker tomorrow so it doesn't get too hard. DD's godmother is bringing some wine and sparkling cider and ingredients for garlic bread.

It’s just the two of BF and myself for dinner tonight. I bough myself a small prime rib to cook, but it’s too early to start yet. BF wants pizza, and we all get what we want on Christmas. We made some cookies and bacon crackers earlier.
Tomorrow my son requested chicken thighs, and his favorite rice. DD said “I don’t care” and I came up with the perfect meal...I’m heading to Olive Garden in a few minutes to pick up her Zuppa soup she loves. (Only about 5 minutes from here!). Chicken, soup, salad, and breadsticks will make a nice Christmas meal tomorrow I think.

This is what I was trying to avoid when I made the butcher show me each piece he had. I don't think he was too thrilled worth my punchlines but I wanted to make sure it had even fat distribution and not too much of it. I was happy with what I came home with.

We make homemade tamales. We prepped them yesterday because they are so much work when you make them from scratch. We're getting ready to steam them now.

Beef is marinating in wine, veggies all prepared. Big wedge already out of the pie! DS is a first responder - so I'm alone tonight but I'm making scrimp scampi.

Just finished baking the chocolate cake. I usually make it into a buche noel, but decided to make it into a 4-layer cake instead this year.
I bought an awesome-looking roast for tomorrow. My friend's family owns the butcher store, and her husband picked out a really nice one for me. He's the best. She dropped off a box of 12 homemade blueberry muffins a little while ago. I'm all set for breakfast now, too.

DH put the briskets in his marinade a while ago. I can't really do my part of the dinner until tomorrow.

It is appetizers and holiday movies for us tonight.
DD and I just finished making 5 dozen spanakopita and tiropita. Everything else is prepped and ready to cook or be put out. Technically only the bacon wrapped dates will be cooked and a spinach artichoke dip heated up. The antipasto/charcuterie plate needs to be assembled.
I'm half thinking about picking the crab legs for tomorrow, but might just leave it.

Tonight is crawfish etouffee. Made it last night so it's a matter of heating it up and making the rice. Tomorrow we're having king crab legs, Gratin Dauphinoise and maybe some roasted asparagus. We do a big breakfast so Christmas evening dinner is always smaller.

When the kids were small, I made prime rib for Xmas day. I love prime rib and I cook what they want for the other holidays, so I got what I wanted for Xmas. that was a lot of work, so I eventually went to a filet roast, which was much easier and my Dd would eat more of it.
When DS became a teenager, we started binging on CSI dads that I would get for Xmas each year. Who wanted to stop long enough to cook a big meal? Not me! A Pea mentioned that they did appetizers that could be prepped ahead and cooked as wanted, so that's what we did. For years.
Now with DH's kidneys being so bad, that doesn't work either. He's pouting because I refuse to make a crockpot full of meatballs in grape jelly for him, nor will I make him pizza or traditional pasta because his phosphate and Potassium are so high right now. Instead, I will make a pot of Italian Wedding soup tomorrow and dole out a couple of meatballs with each helping he gets. He doesn't know it, but I use twice the amount of stuffing (I use crushed stuffing cubes instead of bread crumbs) so that there is less turkey in them. He's excited for that when he stops pouting.
I hit the antipasti bar in Kroger this afternoon and got Dd and I some nibbles. She's thrilled with the Wedding soup, so that's good.

We just finished our charcuterie board for tonight, I’ve baked the cinnamon pie for tomorrow and have the broccoli, rice and cheese casserole ready to go in the oven tomorrow morning. The in-laws are hosting, so I don’t have to worry about anything else. FIL is smoking a turkey and a ham in his big green egg, and I believe that MIL is making two kinds of stuffing . . . for FIVE of us. We will be eating leftovers the rest of the week.

We ate way too much food tonight!
Wings, stuffed mushrooms, jalapeño poppers wrapped in bacon, cheese dip in a bread bowl, vegetables, and homemade donuts for dessert.
